Making Healthy Choices On Busy Weeknights

Recently, I’ve been focusing on feeding my family cleaner foods. I am making most meals from scratch with whole ingredients. I have not ruled out prepared food completely and like using them as ingredients on occasion but for the most part, I’ve been trying to limit the processed foods- or at least, the ones with bad ingredients.

The thing about eating clean is that it takes a bit longer to cook most of the time. I love cooking, but some nights I just don’t have the time. Shane has several activities throughout the week, including soccer, art, and playgroup, and Justin works late & has to go to bed early during the week. So sometimes there’s just not enough time.

Healthy Choice Frozen Meals

For those nights, I keep Healthy Choice frozen meals on hand. They don’t have the scary ingredients that many other frozen foods have & they offer so many choices in flavor! An added benefit is that Justin can use the frozen meal nights as his chance to eat foods I don’t typically serve, like beef. I’m currently obsessed with their new flavor, Crustless Chicken Pot Pie. It’s part of their Top Chef Café Steamers line!

A quick peek at the ingredients list shows that they really make an effort to include wholesome foods in their meals. Healthy Choice is the perfect name for their products, because healthy does not just mean low-calorie {which their meals are as well}. There may be a lot of ingredients, but there are no partially hydrogenated oils & I can identify everything on that list. It’s more than the three or four ingredients that are in the meals that I cook, but I feel good about what’s on their ingredient list & it’s a great compromise to save me an hour in the kitchen on nights when we might otherwise get takeout.

The Crustless Chicken Pot Pie is super easy to make- you don’t even have to poke holes in the plastic because the café steamers vent themselves! When your meal is done cooking, you just flip the top tray over & stir the ingredients into the sauce below.

Clean Eating Tips for Busy Families from Michelle Dudash

I have always been obsessed with learning about food & nutrition. I took Nutrition classes in high school & college, and while I would never claim to be the cleanest eater {I eat primarily healthy foods, but many times in more convenient, less “clean” form}, I am mindful of what I’m eating and am always watching the newest documentaries about food, nutrition, and clean eating. In fact, for awhile now I have been wanting to start slowly transitioning my family to a clean eating lifestyle, and so when I had the opportunity to listen in on a presentation from Michelle Dudash and The Motherhood, I jumped on the chance!

Michelle Dudash is a registered dietitian, Cordon Bleu-certified chef, and the author of Clean Eating for Busy Families. &Most importantly, she’s someone who really gets it. After listening to her presentation & having the opportunity to ask her my own questions, I was so impressed with how real her views are that I actually purchased her book on the spot, even though I was never asked to & was not paid to do so. I could just tell that if anyone could help me transition my family, it was her.

Clean Eating Tips for Busy Families from Michelle Dudash

So what were some of her tips? A few of my favorites are below:

-Get rid of unclean ingredients. These get in the way &you can find things easier. {Not to mention you’ll be less tempted to use them if they aren’t already in your home.}

-Showcase your produce and keep healthy foods within arm’s reach. When foods are easier to see, you’re more likely to eat them.

-Make monthly & weekly shopping trips. Stock up on the essentials {like brown rice, whole grain pasta, canned tomatoes, olive oil, etc.} during your monthly trip. Stock up your pantry! During your weekly trip, pick up proteins & produce that you will need to get through the week. If you get your pantry staples monthly, your weekly trips will be much shorter!

-Cook once, eat twice. Cooking a bigger batch of a versatile ingredient like chicken can save you time in the kitchen. You can use it for dinner one night & lunch the next!

-Get kids in the kitchen. This is a big one for me as it always helps me to get Shane to eat. Kids are more interested in food that they see being made, and they’re much more likely to try it if they help you make it.

-Make lunches the night before. It’s more tempting to grab convenience foods when you’re in a rush in the morning. Make it the night before to avoid stressful mornings.

-Keep it simple. A formula for an easy but healthy dinner is one that contains a protein, vegetable and grain. Bonus points if you get them all into one dish, like a casserole or stew.

I asked Michelle what three foods she finds herself reaching for most often & what I should incorporate into my meals. She responded:

Three is tough! When it comes to meals alone, I will say I almost always cook with extra virgin olive oil and I keep it close! I use freshly ground black pepper in almost everything because you’re adding flavor without calories or sodium. We keep spaghetti sauce in my house and use it on a weekly basis. Cooked tomatoes are also very nutritious, economical and convenient. Brown rice is definitely another staple that I keep on hand, but remember it takes a little bit longer to cook. (Put the lid on to speed up cooking!) Lastly, we always have a variety of whole grain pastas. I like the ones that have a little bit of legume flour and whole grains.

The minute she mentioned that she enjoys pasta, I knew I could totally do this clean eating thing!

Whether eating clean or not, we can all agree that breakfast is an important meal, especially for kids. But thousands of kids go to school each day hungry, without enough food or money to eat before school. This March, the Walmart Foundation donated $6.7 million in grants to 5 national nonprofits that are providing children with school breakfast and helping families develop better eating habits. The grants are part of Walmart & the Walmart Foundation’s $2 billion commitment through 2015 to help fight hunger in America. Recipe: Broccoli & Cheddar Soup with Silk Soy Milk!

I love soy milk. I’m moderately lactose intolerant, but I love cereal, so every morning I start my day with a bowl of cereal and some light vanilla soy milk. I even use soy milk when I’m baking or cooking- it works just like cow’s milk, but doesn’t make my stomach hurt every time I consume it. I call that a win-win.

Broccoli and Cheddar Soup

A couple of months ago, I discovered my love for broccoli & cheddar soup. Specifically, Panera Bread’s version, but really, any will do. So far, I have only been able to enjoy a small portion of it at a time due to the milk used to make it, but on cold winter nights I really like to have warm soup for dinner. So I headed to Walmart {check out my shopping trip on G+} to pick up some Silk Soy Milk- already a favorite, but even more so now that they have a “New Great Taste”- and the rest of the ingredients I’d need to make my favorite soup at home!

Ingredients:

-1/2 cup butter {I used light}
-1/2 cup all-purpose flour
-3 cups Silk Soy Milk*
-1 1/2 cups chicken broth
-Dash of salt
-2 cups chopped fresh broccoli
-1/2 tsp garlic powder
-1 cup shredded cheddar cheese
-1/4 cup grated fresh carrots {optional}
*Note: I used vanilla flavored milk on accident just because I’m in the habit of buying it for my cereal & picked it up at the store without thinking. While it still works in this recipe &still tasted good, it was very sweet so I would recommend using Plain.

1. In a large pot, melt butter on medium heat.

2. Stir in flour until blended.

3. Add chicken broth and Silk Soy Milk. Mix well and bring to a boil. Continue to cook, stirring frequently, for about 3 minutes. Add a dash of salt.

4. Add broccoli and garlic powder and still well. Cook until heated through, about 3 minutes.

5. Add cheese, stir well, and cook until melted.

6. Pour into individual bowls and if desired, garnish with about 2 tbsp. shredded carrots.

It’s pretty simple to make & perfect for cold days! &It’s easily adaptable, too- you can easily cut out some calories by using Silk’s Light Soy Milk and reduced fat cheddar cheese. You could add some salt for flavor, or if you’re watching your sodium intake you can use low sodium chicken broth. This is a great base recipe to play around with & make your own! International Delight Light Iced Coffee: My Secret Weapon! #LightIcedCoffee

If you follow me on any social media channels, you’ve probably noticed that I tend to be the most active from 10pm-4am PST. Those are my “office hours”- and it’s one of the best & worst things about being a professional blogger. Since I work from home & for myself, I can set my own hours & work when I want, which means I can dedicate my days to spending time with my son and then work while he sleeps. The problem is, it’s still 10pm-4am. &A lot of the time, I’m tired, and very, very unmotivated.

Pull-Ups Training Pants: A Perfect Compromise #HuggiesWalmart

It feels like we’ve been potty training Shane forever. We got a potty early to get him used to it, and we aren’t pushing it too hard because we don’t want to scare him away from it. &While I know he won’t wear a diaper forever, we’ve recently decided that we need to start being slightly more aggressive in our approach.

One of the things that I’ve found to be helpful is making Shane not want to wear diapers. It’s not that he doesn’t like the potty- it’s that he does like his diapers and for him, they’re almost a security blanket. In the past, buying “big boy underwear” has worked to an extent- he’ll get really excited about them & let me put them on him, but the second he pees in them on accident, he freaks out & refuses to wear them for weeks. I know that the whole point of doing a “cold turkey” switch like this is for the child to know when they are going so that they can learn how it feels & learn to recognize that the feeling means they have to go visit the potty, but it’s not worth it to me. Shane just gets too distraught when he pees in his underwear & it makes him even more nervous about potty training.

So we’ve decided to go ahead with Pull-Ups Training Pants since they’re the best of both worlds! They still absorb accidents so that Shane doesn’t get too upset, and they help him to know when he’s using the bathroom! They have two different kinds of training pants- the Learning Designs variety, which has a design that fades when it gets wet, and the Cool Alert kind that feels cool within seconds of getting wet!

Cars Pull-Ups

We’ve only tried the Learning Designs variety & have tried them on and off for awhile now, but I think that from now on  we’ll be switching to the Pull-Ups! I just love how easy it is for him to take them off and I like that he doesn’t have to lay down for me to put them on. They have easy-open tabs just like diapers so there’s no mess, and he can feel like a big kid in his Lightning McQueen training pants!

Pull-Ups Flushable Wipes

To help support our potty training efforts, we also picked up some of the Pull-Ups flushable wipes and some Dum-Dum lollipops to use as a reward for using the potty. We had been using a sticker system where he could earn stickers for using the bathroom & save them up to get toys he wanted, but he got frustrated by how long it was taking to earn the toys & just kind of gave up. So, I think instant gratification will work better for him.

Since we’re going to be switching to mainly Pull-Ups, we are going to take advantage of Walmart’s current rollback price of just $8.97! We already did that last week when we ordered some & picked them up just a little while later, but I think I’m going to stock up on some more! {But, since Walmart is sure to be crazy crowded right now due to the post-Thanksgiving gift-buying rush, I think I’ll be ordering online & having them shipped next time.}

Pull-Ups

As you can tell, I don’t really have any tips yet for potty training since it’s been a long process for us & we’re not at the finish line yet. That said, the tip that I swear by is to listen to your child. If they don’t feel comfortable doing something, don’t make them feel bad about it or push them to do it anyway. You can always encourage your child to sit on the potty, but never make them feel bad if they just can’t bring themselves to do it. It may get frustrating when it seems like you’ve been potty training for years {trust me} but it will happen eventually.
