Family time is very important to me. However, we spend most of our day apart- Justin leaves for work before the kids & I are awake and Shane goes to school three days a week.
Now with the new baby at home, even when I’m at home I don’t get to spend as much time reconnecting with the boys as I’m used to because the baby tends to need something at just the wrong time. So it’s become even more important than ever to enjoy our dinner together as a family!
I love to cook for my family, but I don’t always have an hour to cook a meal from scratch. On those nights, I rely on foods that make it easier for me to provide a semi-homemade meal for my family.
One of my new finds makes prep, cooking, and cleanup take just a fraction of the time- Velveeta Cheesy Skillets! I found a large selection of flavors at Walmart, but ended up choosing the Chicken & Broccoli one because even Shane, a stereotypically picky eater at 4 years old, likes everything in it.
The Cheesy Skillets are super easy to make- and they only take one skillet! As much as I love cooking from scratch when I have the time, I despise the dishes that go with that. Being able to make this entire meal in one skillet was definitely a time saver. There was also very little prep- everything except for the chicken is in the box, ready to be added to the skillet- all I had to do was cut the chicken.
Once that was done, there were some very simple steps to follow. I had to cook the chicken until it was done, then add 2 1/4 cups of water, the pasta, and the seasonings. I covered that & let it cook for 8 minutes before adding in the broccoli and letting it cook another 2 minutes. After that, I just had to add the Velveeta Cheese Sauce!
This meal took about 20 minutes from start to finish & saved me time on clean-up as well, which probably saved me an average of 30-45 minutes over a from-scratch meal.
