I love soy milk. I’m moderately lactose intolerant, but I love cereal, so every morning I start my day with a bowl of cereal and some light vanilla soy milk. I even use soy milk when I’m baking or cooking- it works just like cow’s milk, but doesn’t make my stomach hurt every time I consume it. I call that a win-win.
A couple of months ago, I discovered my love for broccoli & cheddar soup. Specifically, Panera Bread’s version, but really, any will do. So far, I have only been able to enjoy a small portion of it at a time due to the milk used to make it, but on cold winter nights I really like to have warm soup for dinner. So I headed to Walmart {check out my shopping trip on G+} to pick up some Silk Soy Milk- already a favorite, but even more so now that they have a “New Great Taste”- and the rest of the ingredients I’d need to make my favorite soup at home!
Ingredients:
-1/2 cup butter {I used light}
-1/2 cup all-purpose flour
-3 cups Silk Soy Milk*
-1 1/2 cups chicken broth
-Dash of salt
-2 cups chopped fresh broccoli
-1/2 tsp garlic powder
-1 cup shredded cheddar cheese
-1/4 cup grated fresh carrots {optional}
*Note: I used vanilla flavored milk on accident just because I’m in the habit of buying it for my cereal & picked it up at the store without thinking. While it still works in this recipe &still tasted good, it was very sweet so I would recommend using Plain.
1. In a large pot, melt butter on medium heat.
2. Stir in flour until blended.
3. Add chicken broth and Silk Soy Milk. Mix well and bring to a boil. Continue to cook, stirring frequently, for about 3 minutes. Add a dash of salt.
4. Add broccoli and garlic powder and still well. Cook until heated through, about 3 minutes.
5. Add cheese, stir well, and cook until melted.
6. Pour into individual bowls and if desired, garnish with about 2 tbsp. shredded carrots.
It’s pretty simple to make & perfect for cold days! &It’s easily adaptable, too- you can easily cut out some calories by using Silk’s Light Soy Milk and reduced fat cheddar cheese. You could add some salt for flavor, or if you’re watching your sodium intake you can use low sodium chicken broth. This is a great base recipe to play around with & make your own! I used to use soy milk all the time, but we’ve switched to Almond. I always use soy or almond when cooking.

Oh man, I love broccoli and cheddar soup. Panera’s is really good too. I should try this soon, my husband is lactose intolerant as well, so he could eat this.
