It’s no secret that I’m a huge fan of S’mores- I’ve already posted just about every version of s’mores you could possibly want. {See the full list at the bottom of this post!}
The one I haven’t shared yet happens to be one that I used to just purchase- Starbucks had these amazing S’mores Dessert Bars every summer that were absolutely the highlight of the sunniest time of the year.
Between the crumbly, sweet graham cracker base, the smooth chocolate layer and of course, the gooey marshmallows on top- I looked forward to the S’mores Dessert Bars all year long.
Until they stopped making them.
So now I just make them myself! Sure it takes more work than going through the drive-thru, but it’s also a lot cheaper and honestly they aren’t that much work at all. And since I’m making them myself, I can even customize them! Read on to find out how to make them yourself and start a fun new summer tradition!
What crackers are best for S’mores Bars?
Definitely use graham crackers in this recipe! Not only does that give you the true s’mores combo but they also have just the right texture for this.
To make life even easier, this recipe calls for using pre-crushed graham cracker crumbs, which you can find in the baking section of any grocery store {check by the pie crusts}. If you already have a bunch of graham crackers on hand though just throw them in the food processor until they’re very fine and you’re all good!
Tip: You could also use Golden Grahams cereal for this; just process the cereal until you have 2 cups of crumbs!
Do these use Hershey’s Bars? What candy can you use in S’mores Bars?
This recipe is super simple and doesn’t use chocolate bars- chocolate chips are a lot easier to work with in this one. But that doesn’t mean you’re stuck with traditional milk chocolate chips!
If you want to switch up the recipe, try other baking chips like white chocolate chips, dark chocolate chips, or even candy baking chips!
One of my personal favorite twists on s’mores in general is using peanut butter cups in place of the chocolate bar- so I bet swapping half of the chocolate chips for peanut butter chips would be amazing!
Can you make S’mores Dessert Bars with large marshmallows?
You can totally use jumbo marshmallows for this recipe if you want! You don’t even have to change any of the steps to make the recipe, just be mindful that it may make cutting the bars a little harder.
With the mini marshmallows it’s easier to cut in between them, but odds are you’ll have to split a jumbo marshmallow if you use those. That’s fine, but if you cut the bars while they’re still really warm you might have issues with the marshmallows sticking to the cutter, so just be careful!

S'mores Dessert Bars
Miss the Starbucks S’mores Dessert Bars? Make them yourself with this simple DIY copycat recipe! These easy bars are made with honey graham cracker crumbs, chocolate chips and marshmallows and are one of the best outdoor summer party treats! You can even customize them with golden grahams crumbs, other chocolate varieties and more.
Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup butter, melted
- 1 12-ounce package chocolate chips
- 1 10-ounce package mini marshmallows
Instructions
- Preheat the oven to 350 degrees
- Combine the graham cracker crumbs and butter and press into a 9x13 baking dish lined with parchment paper
- Bake the crust for 8-10 minutes until golden brown
- Spread the chocolate chips over the crust and bake an additional 2 minutes, until melted. Use a spatula or knife to smooth the melted chocolate
- Top with marshmallows and cook under the broiler for 1-2 minutes, until toasted
- Let cool completely, then slice into bars
