While most people count down the days until summer hits, we aren’t big fans of it around here- even the kids. We love having a break from school but with the extreme heat that we get here, we basically hibernate in the summer the way that others have to stay inside on snowy winter days. When the heat is over 110 each day, there are limited options for what you can actually go and do- even walking to the mailbox feels like a trip to the sauna.
That said, there are a couple of things that I actually do like about summer- swimming, and s’mores. We eat traditional s’mores that we make over our backyard tabletop fire pit quite often but sometimes we like to try s’mores in new and fun ways. {Check out these Sugar Cookie S’mores Bars, Patriotic Pretzel S’mores, Easy S’mores Bark, and S’mores Sundae recipes for ideas!}
Our latest version of s’mores has been these delicious- and easy- S’mores Bites! They take just a few minutes to make and you can make a lot at once, so you’ll have the perfect little bite of summer whenever you want it.
S’Mores Bites Recipe
Ingredients:
1 cup Graham Cracker Crumbs
8 TBSP Butter, melted
1/4 Cup Powdered Sugar
8 Large Marshmallows {I used S’moreMallows}, cut in half
Chocolate chips {About 1 Cup, depending on how much you love chocolate!}
Directions:
Preheat oven to 350 degrees.
Grease a mini-muffin pan {get one here}- I recommend using non-stick spray since those muffin cups are hard to get into!
Mix Graham cracker crumbs and powdered sugar, then add in melted butter. Mix well.
Add the mixture to the muffin cups and press against the edges and bottom to make cups. I was able to get 16 cups from this amount of mixture but your amount may vary based on how thick you make the cups.
Bake in the oven for 8 minutes, or until the cups start to get darker brown.
When they’re out of the oven, fill the cups with chocolate chips and top with half of a large marshmallow.
Put the oven on broiler and stick the cups in- I recommend the middle rack to avoid them getting too hot, too fast.
Keep an eye on them and take them out when they begin to brown- it took about 4 minutes in my oven, but all ovens are different!
Allow to cool for 30-45 minutes, then use a spoon or butterknife to pop them out.
{These keep really well in an airtight container- but be sure to use one or the marshmallow will get really hard.}
