This time of year, nothing warms you up quite like a cup of hot cocoa. A few days ago I shared a delicious hot cocoa recipe, but the one I’m sharing today is a little different- because you can eat it!
These hot cocoa cookies are a delicious and easy treat that will bring a smile to anyone’s face. They use cake mix to make them extra soft, and even have marshmallows in them because no hot cocoa is complete without marshmallows!
Hot Cocoa Cookies
Ingredients:
1 box of chocolate cake mix
2 large eggs
2 tbs. flour
1/4 cup hot cocoa mix
1/2 cup cooking oil
1/2 cup chocolate chips
1/2 cup Kraft Mallow Bits {you could also substitute mini marshmallows cut in half, but freeze before adding them to the cookie dough}
Directions:
1. Place the mallow bits in a small bowl and set in the freezer for 30 minutes.
2. Preheat the oven to 350 degrees.
3. Combine the cake mix, 2 tablespoons of flour and hot cocoa mix. Add in the 2 large eggs and 1/2 cup of cooking oil, mixing well.
4. Stir in the chocolate chips and frozen mallow bits.
5. Place the cookie dough in the fridge for 15-20 minutes to chill.
6. Remove the cookie dough from the fridge and roll into 1-2″ balls. Place the them about 2-3″ a part on your baking sheets and gently pat down on each one down about 1/4″
7. Bake 8-10 minutes.
*Makes approximately 2 dozen cookies

These are such sweet cookies – and I love the idea to use a cake mix to make them – I would have never thought of that!
