My two favorite things to treat myself to are a good cup of coffee and cookies. I have coffee every day- sometimes a couple of cups- and that’s my daily self-care that I never waver from. Cookies however are a “sometimes” food, just like Cookie Monster taught me- but they’re hands down my favorite dessert.
So when I had the idea to combine the two together? Pure magic happened.
These Coffee-Infused Cookies are just the right amount of sweet, with a delicious coffee taste that comes from a great cup of joe.
For this recipe, I used the 37-ounce canister which is available exclusively at Walmart. Community® coffee American Classic™ blend. I picked it up recently on a grocery run and I just love how smooth but rich it is! It immediately had me wanting a dessert to go with it so the idea for these cookies was born.
This recipe starts by brewing a delicious cup of coffee, but you only need a little bit of it for the recipe so you can definitely drink the rest!
Crinkle Coffee Cookies Recipe
Ingredients:
½ cup softened unsalted butter
½ cup light brown sugar
¼ cup sugar + more for coating
4 TBSP brewed Community® coffee American Classic™ blend {cool in the fridge before using}
1 egg yolk
1 tsp vanilla extract
2 cups flour
¼ tsp salt
Directions:
1. Preheat your oven to 350 degrees and spray a cookie sheet with non-stick spray.
2. Use a stand mixer {or hand mixer, but it will take longer} to combine the butter and sugars until well combined, about 1 minute. Be sure to scrape the edges to get it all mixed in! Then add the egg yolk, coffee, and vanilla extract and combine for another minute or so.
3. Add flour and salt and mix until fully combined. Roll dough into small balls and roll around in a small bowl of sugar.
4. Bake for about 10 minutes and then take them out. Using a spoon, very gently tap down on them a couple of times to get them to “crinkle”. Put back in oven until finished baking, about 2-3 more minutes.
5. Allow to cool and enjoy with a delicious cup of coffee!

It’s smooth and not overpowering but has plenty of rich flavors. It is really good black or with any kind of creamer, and of course, it’s great as an ingredient too! Of course, this coffee would go great with any dessert- and luckily it’s the time of year where desserts are in abundance. This coffee would go great with coffee cake, fudge, brownies, you name it! Or if you don’t have a sweet tooth as I do, it still makes for a great cup of coffee.
