These easy cake mix cookies are always a winner around here because they’re perfect for Valentine’s Day and are SO good!
These delicious cookies are made with simple ingredients so they don’t take long to make- I can even make them right before school pick up and have them ready to go after school!
If you’ve never made cake mix cookies before, prepare to be blown away. Using cake mix to bake cookies is such a great hack that saves you time, gives you a great flavor, and produces delicious, chewy cookies.

Is cookie mix the same as cake mix? How do you make cookies with cake mix?
It might seem crazy, but all you really need to make chewy cookies with a box of cake mix is what you’d need for a cake- vegetable oil, eggs, and any flavor cake mix. The amount of each ingredient and the baking method will vary, but you’re using the same basic components.
Cookie mix is different from cake mix in the quantity of each ingredient. You’ll have the same basic ingredients in it, like flour, sugar, etc. but the ratio of cake mix is designed to make it a little thinner of a consistency- until we add the rest of our ingredients, anyway!
I love using all different cake mixes- strawberry flavor is great for Valentine’s Day but you could also make Red Velvet Cake Mix Cookies; Funfetti Cake Mix Cookies would be great for birthdays, and Chocolate Cake Mix Cookies would be great for chocolate lovers!
Can you make 3 ingredient strawberry cake cookies?
You can make easy cookies with as few as 3 ingredients- just cake mix, eggs and vegetable oil. That said, the white chocolate chips and pink M&M’s in these make them a little extra special, so if you can add them I highly suggest you do!
But if you already have a box of strawberry cake mix at home and want to just whip these up right away, they’ll still be delicious.
Can you make strawberry cake mix cookies with no eggs?
If you’re short on eggs or can’t eat them {or don’t want to pay the high prices at the grocery store right now!} you can still make these cookies!
You can sub out the 2 eggs for 1/2 cup of plain yogurt, 1/2 cup of unsweetened applesauce, or an egg substitute commonly available in the healthy eating section of your grocery store.
How do you store strawberry cake mix cookies?
These cookies are pretty easy to store- just keep your baked cookies in an airtight container at room temperature, which will keep them fresh for 5-7 days.
If you want to save some for much later than that, you can put them in your freezer in a food storage bag- just make sure you use a freezer bag so it’s thick enough to stand up to the cold!

- Parchment Paper
- Electric Mixer- either a hand mixer or stand mixer will do
- Large mixing bowl
- Either a medium cookie scoop or a small ice cream scoop
- Wire Cooling Rack

Preheat your oven and line a large baking sheet with parchment paper
In a large bowl, use a hand mixer {electric mixer} on medium speed to beat together the cake mix, vegetable oil, and eggs – you can also use a stand mixer.
Fold in the white chocolate chips and M&M’s
Use a medium cookie scoop or small ice cream scoop to form cookie dough balls- leave around 1 inch around each for spreading- then bake for 10-12 minutes
Allow to cool for 5 minutes on the cookie sheet, then transfer to a wire rack to cool completely

- 1 box strawberry cake mix
- ½ cup vegetable oil

Instructions
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper
- Beat together the cake mix, vegetable oil, and eggs until well mixed
- Fold in the white chocolate chips and M&Ms
- Use a cookie scoop to scoop the dough and place it on the lined baking sheet. Leave around one inch between each cookie to allow for spreading
- Bake the cookies for 10 to 12 minutes, until the edges are just beginning to brown
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely
