These easy Pumpkin Spice Cookies are made using cake mix, which not only cuts down on prep time but also makes them extra fluffy and delicious!
Unlike most pumpkin spice foods and drinks, these Pumpkin Spice Cake Mix Cookies don’t JUST have pumpkin pie spice in them- they also have real pumpkin! That adds a little bit of protein and some nutrients, so you don’t have to feel bad about the cream cheese frosting or sugar. Balance, right?
You can make these cookies without the frosting {and without making them into whoopie pies} if you’d like- with or without it, these cookies are delicious all on their own.
How long can Pumpkin Spice Cookies sit out?
These are a GREAT party recipe for a Halloween party or other fall get-together {even Thanksgiving!} so I totally get wanting to make these ahead. These will hold up great as long as you don’t frost them until it’s time to serve them.
If you’re just making the cookie part and leaving it as-is, bake them up to 7 days in advance and keep them in an airtight container on the counter while you wait to indulge. But if you’re making them into whoopie pies with cream cheese frosting, frost them within a few hours before serving.
That said, you can make the frosting ahead of time and keep it in the fridge until it’s time to use it!
Can you replace the egg in the cake mix with pumpkin?
Yep, if you look at this recipe you’ll notice that it doesn’t require any eggs even though you’re using a cake mix. That’s because the pumpkin in the recipe actually takes it’s place!
Pumpkin is a great alternative to eggs in baking recipes as long as it’s used properly. It adds a lot of nutrients and some depth to all kinds of recipes!
How can I make these dairy free?
This recipe is super easy to make dairy free, even if you use the cream cheese frosting! Just sub out the butter and cream cheese for dairy-free versions {I love Miyoko’s Vegan Butter and Kitehill Cream Cheese}. You’ll also want to check your cake mix to make sure it doesn’t have dairy in it but most don’t- just worth double checking!

Pumpkin Spice Cake Mix Cookies
Did you know that you can make Pumpkin Spice Cookies using cake mix? It’s a really easy baking recipe hack that saves you time and makes fluffy, chewy cookies! This recipe takes it even further with pumpkin puree and cream cheese- and a cream cheese frosting- for a rich, decadent cookie sandwich or whoopie pie!
Ingredients
- 8 ounce package cream cheese, softened
- 1/2 cup butter, softened
- 1/2 cup pumpkin puree
- 1 box yellow cake mix
- 1 tablespoon pumpkin pie spice
- For the Frosting:
- 1 jar cream cheese frosting
- 2 teaspoons pumpkin spice
Instructions
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Beat together the cream cheese, butter, and pumpkin until smooth.
Add the cake mix and pumpkin spice and beat until a thick dough forms.
Use a tablespoon to form the dough into balls. Place the dough on the prepared baking sheet.
Bake for 13 to 15 minutes, until the edges are golden brown.
Allow the cookies to cool on the pan for five minutes, then transfer to a wire cooling rack to cool completely.
To prepare the icing, beat the cream cheese frosting and pumpkin spice together until well combined.
When the cookies are cooled completely, pipe the icing on the bottom of one cookie and place a second cookie on top to form a sandwich.
