Two of the best things to wake up to on the breakfast table are caffeine and baked goods. Even better? Both in one- like you get with these delicious Mocha Muffins!
These muffins are a great way to start your day because they combine two of the best things in the world- chocolate flavor and coffee. The rich cocoa powder mixed with the espresso powder gives them a deep flavor, but it’s balanced out with the addition of sugar, vanilla extract, chocolate chips and the secret ingredient- sour cream! {I promise, it’s delicious.}
This muffin recipe also makes a great mid-day snack that double as a pick-me-up! And like any good muffin, they’re moist and delicious!
How can I make these Dairy-free Mocha Chocolate Muffins?
There isn’t all that much dairy in these muffins surprisingly, and what dairy is in it can very easily be swapped!
Instead of using regular milk, use any alternative that you enjoy including almond milk, soy milk, oat milk, or coconut milk. I definitely recommend using unsweetened and unflavored, though if you like your muffins really sweet you could play around with a vanilla flavored milk alternative.
You’ll also need to swap out the sour cream to make a dairy-free but moist muffin, but luckily there are lots of options for that! You can either:
- Use a dairy-free sour cream- your local grocery store may make their own, or Kite Hill has a great one that is carried at many stores
- Use coconut cream
- Use a Plain non-dairy yogurt
- Make your own vegan sour cream: mix non-dairy milk with lemon juice or apple cider vinegar and let it sit a few minutes until it thickens.
You may also want to swap the chocolate chips for a vegan variety, depending on your dairy tolerance.
Psst. Looking to make this recipe vegan? Follow the above steps and swap out the eggs for an egg substitute!
What kind of coffee/espresso do I use for Chocolate Chip Mocha Espresso Muffins?
These Mocha Espresso Muffins use espresso powder, which can be found at most grocery stores or online. The stronger the espresso powder you use is, the more coffee flavor will come through in the muffins!
What do Mocha Muffins taste like?
These muffins are a great recipe for anyone who loves coffee and chocolate! They’re rich and moist and have a strong coffee flavor, which can be adjusted to your preferences by selecting a stronger or weaker espresso powder.
I also recommend adding a few dark chocolate chips on top before putting these in the oven so that you get a little extra chocolate with every bite!
