This time of year can be SO busy! I know it’s not just our family either- odds are your calendar is filled with so many things from fun fall traditions like pumpkin patches, hay rides and carnivals to school events like Halloween dances and fundraisers.
It can be hard to find time to connect together as a family when everyone has a super long to-do list, which is why I make a point of spending every breakfast and dinner with my family. I know that’s not possible for every family- in fact, my husband works early mornings so even he’s not around for breakfast five days a week- but there are things that make it easier, like making breakfasts ahead of time.
Look, I also roll my eyes at movies when they show Mom putting a full breakfast spread on the table on a random Tuesday. No one is trying to talk you into that! But these muffins are super quick & easy, and you can make them ahead of time so all you have to do in the morning is add some icing and catch up with the kids.

Whether you make these ahead for a busy weekday breakfast to start the day on a sweet note or you make these as a special weekend breakfast {or dessert- they are pretty sweet!} these will be a huge hit for the whole family. And believe it or not, there are some health benefits to this recipe, too!
Why are these Monkey Bread Muffins and not just Monkey Bread?
Monkey Bread is traditionally made using a Bundt cake pan, but this recipe makes these the perfect individual serving size by using a muffin tin! That means that these are pre-portioned and are even great for quick breakfasts before school.

Do these Pumpkin Spice Muffins have actual pumpkin in them?
Yes! Unlike pumpkin spice lattes, which just contain pumpkin spice, these muffins actually contain actual pumpkin as well. Pumpkin has a lot of health benefits- it has a lot of vitamins and minerals that help with everything from improving your eyesight to giving you better skin. Granted, this recipe also has cinnamon rolls- but all things in moderation, right?!?

Do you need to refrigerate Monkey Bread Muffins?
Nope! These muffins can be stored at room temperature but I’d recommend either putting them in a bag or covering them with foil or plastic wrap if you won’t be serving them right away.
ALSO- only add the icing to the muffins you’ll be eating right away. The icing can make the muffins soggy if they’re sitting out for hours or days. And while the muffins themselves don’t need to be refrigerated, I’d recommend saving any additional icing in the fridge until you’re ready to eat more muffins!

Pumpkin Spice Monkey Bread Muffins
This easy Pumpkin Spice Monkey Bread Muffins recipe uses canned cinnamon rolls and real pumpkin for a delicious mash-up of two classic baked goods!
Ingredients
- 2 8-count cans cinnamon roll dough, cut into small pieces
- 1 teaspoon pumpkin pie spice
- 1 cup packed brown sugar
- 1/2 cup butter
- 1/4 cup canned pumpkin
Instructions
- Preheat the oven to 350 degrees and grease a 12-cup muffin pan with nonstick cooking spray.
- Add the cinnamon roll dough pieces to the muffin cups.
- Heat the pumpkin pie spice, brown sugar, butter, and pumpkin in a small skillet over medium low heat, stirring often. Continue cooking until the butter is melted and the sugar has dissolved.
- Spoon the mixture evenly over the top of each muffin. Place a pan under the muffin pan in the oven to catch drips.
- Cook for 20 to 25 minutes, until the cinnamon rolls are cooked through.
- Allow to cool in the pan until safe to touch, then place a cookie sheet over the top of the pan and flip the muffins onto the pan.
- Drizzle the cinnamon roll icing over the top of the muffins before serving.
