Does anyone else consider ice cream it’s own food group this time of year? Our family always loves ice cream, but in the summer with super high temps here in Vegas, ice cream becomes practically a necessity.
Ice cream can be fun to play with in other recipes, too! I’ve shared a few different ways to make ice cream {links are at the bottom of this post!} but this time, I’m using the ice cream as an ingredient for something totally different!
Growing up, my Grandpa always had a carton of Neapolitan Ice Cream waiting for us to share when I came to visit. These muffins include the classic taste trio in a totally different form!
Can You Use Just One Flavor?
If you’re not big on one of the flavors in the Neapolitan ice cream trio, you can totally just skip it. You’ll need to replace it with one of the flavors you do like, so make sure to double up on that part of the recipe. For example, if you want to swap the strawberry for more chocolate, just use 2 TBSP cocoa powder and skip the strawberry jam.
Are these Neapolitan Ice Cream Muffins Vegan? Gluten-Free?
These are definitely not vegan- they include butter, eggs, and ice cream. They are vegetarian though of course!
They also aren’t naturally gluten-free since they contain flour, but you could swap out the traditional flour for gluten-free flour. There are oats in there, but as long as you buy from a brand that is careful about cross-contamination {like Quaker} you should be okay with that unless you’re sensitive to oats. You also might want to check the brands of ice cream you choose to ensure they’re gluten-free.
Please note that I am NOT gluten-free and only have limited experience in that arena, so please take steps to protect your health as needed!
Can the Kids Help Make These Neapolitan Ice Cream Muffins?
Kids can ALWAYS help in the kitchen! For this recipe, I’d suggest having kids of any age try to help by:
- Helping to push the button on the food processor/blender
- Set the muffin liners in the tray
- Help to mix ingredients
Depending on your child’s age and level of expertise, they might be able to do more. You know your kid better than I do but depending on their age/level, I’d also suggest that you help a little extra with:
- Adding ingredients to the food processor/blender
- Separating the batter into three equal parts
- Adding the batter to the piping bag and piping into muffin tins
- Using the oven

- Food processor or blender
- Large mixing bowls
- Piping bags {or sandwich bags}

Neapolitan Ice Cream Muffins
These Neapolitan Ice Cream Muffins taste just like the classic ice cream trio- but in muffin form!
Ingredients
- 1 ½ cup flour, spooned and leveled
- ½ cup old fashion oats
- ¼ cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 stick butter, melted
- 1 ½ cup vanilla ice cream, melted but not hot
- 1 large egg
- 1 tablespoon unsweetened cocoa powder
- 1 tablespoon strawberry jam
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350 degrees F.
- Ready a muffin tin with liners or grease.
- In a food processor or blender, add oats and blend until a flour.
- In a large bowl, sift together the oat flour, sugar, baking powder, baking soda, and salt.
- In a large mixing bowl, add ice cream, butter, and egg and mix together.
- Add the flour mixture to the ice cream mixture and mix until just combined.
- Separate batter equally into 3 separate bowls.
- In one of the bowls mix in the cocoa powder, in the second mix in the jam, and in the third mix in the vanilla.
- Add each of the batter colors into a piping bag or sandwich bag, and pipe into muffin tins simultaneously.
- Bake for 30 minutes or until a toothpick comes out clean.
- Remove from oven and allow muffins to cool outside of the tin.
- Enjoy!
