Zac’s birthday is next week- he’s turning 3! The last three years have gone by in the blink of an eye and as of next week, we will officially be done with the baby and toddler stage.
It’s so bittersweet- I’ll miss the tiny toes and sweet baby smell but Zac is just such a fun kid and I’m excited to keep watching him grow into the big kid he’s becoming right in front of our eyes!
While his birthday isn’t until the 31st, we’re already in full blown celebration mode over here. We’re going to his favorite places and spending time together watching movies and playing games- and of course, eating some of his favorite snacks!
These Ice Cream Cone Cupcakes are actually something that I made a long time ago but since he’s been asking for them again to celebrate his birthday, I realized I never shared them here- until now!
These Ice Cream Cone Cupcakes are so easy to make- you make them very similarly to regular cupcakes, but with a few small changes. They are such a fun way to eat cupcakes and I like them for young kids especially because cupcakes can be really messy, so having a cone to keep everything together is really helpful!

Ice Cream Cone Cupcakes
Ingredients:
Pack of ice cream cones
2 cups of flour
1 teaspoon of baking powder
Pinch of salt
1 stick of butter are room temperature
1/2 cup of vegetable shortening
2 Eggs
3/4 cup of milk
1 teaspoon of vanilla extract
Directions:
1. Preheat the oven to 350 degrees.
2. Sift flour and baking powder together, then add salt.
3. Mix in butter and vegetable shortening.
4. Add one egg at a time into a mix and mix well.
5. Add milk and vanilla and stir until everything is well combined.
6. Fill each cone a little under halfway {about 1-2 TBSP depending on your cone} or halfway if you’d like it to go over the top a little!
7. Place each cone into a cupcake pan and carefully put it in the oven. Bake for 15-20 minutes or until a toothpick comes out clean.
8. When the cupcakes are done baking, let them cool all the way. Once they’ve cooled, add your icing and sprinkles and enjoy!
