Easter is a busy enough holiday so this is an easy recipe- these cupcakes are what I like to call semi-homemade. They include some premade ingredients {in this case, a boxed cake mix and Peeps marshmallows} but you’ll add a few things to really make these bunny cupcakes special!

With their bright colors and delicious marshmallows on top of the cupcakes {that are also super cute!}, these cupcakes will be a hit with the kids and grown ups alike! Plus, they’re super easy to customize- have you seen how many kinds of Peeps marshmallows there are now?!- so you can really make them your own! This has to be one of the easiest cupcake recipes you can make for Easter!
What other flavors could you try?
While I used Strawberry Jello and Berry Blue Jello to flavor my cupcakes, you could use any Jello flavor available. Whether you’re trying to match Peeps that are a different color or you just don’t like the flavors I used, you can totally get creative with this and use any kind of Peeps you can find in an Easter basket!
Some suggestions:
- Raspberry Jello with Sparkly Wild Berry Bunnies
- Lime Jello with Green Peeps Chicks
- Lemon Jello with Yellow Peeps Bunnies
Tip: You’ll probably want to swap out your food coloring colors as well for the icing, though that’s totally up to you as well!

What ingredients do I need to make Peeps cupcakes?
Here’s the best part about this recipe: You barely need any ingredients at all! The cupcakes themselves are just cake mix {and whatever your cake mix calls for, like eggs and oil} and Jello mix!
To make the frosting shared here you’ll need a few extra ingredients- some butter, vanilla extract, powdered sugar, milk and food coloring. Or if you want to make this recipe even easier? You can totally buy premade frosting and add some food coloring to it. It is totally your call to make!
How long do Peeps cupcakes stay fresh?
This is the one tricky bit about baking with Peep candy- if you have any experience eating them, you know they get stale pretty quickly once you open the package!
If you aren’t going to be eating these right away, you can store them in an airtight container at room temperature for about 2-3 days. The Peeps will begin going stale pretty quickly but will still be edible as long as they’re stored properly. They’re definitely better fresh though so if you’re able to make these shortly before serving them, I would definitely recommend it!

What Supplies Do You Need to Make Peeps Cupcakes?
To make Cupcakes with Peeps, you’ll need:

- Cupcake pan
- Cupcake liners
- Mixing bowls
- Silicone spatulas
- Hand mixer or stand mixer {or a whisk and some patience}
- Bowls
- Piping bags
Step by Step Guide
Ready to bake? Grab the printable recipe at the bottom of this post and come back here to get started!

Prepare the white box cake mix in a large bowl according to the package directions in a large bowl or the bowl of a stand mixer

Separate batter into two bowls; add Strawberry Jello to one bowl and Berry Blue Jello to the second bowl

Stir each bowl to fully mix in the Jello

Fill each cupcake liner in the muffin cups about 2/3 full of cake batter and bake according to cake mix package directions until a toothpick inserted into the center of the cupcake comes out clean

To make your icing, in a medium bowl beat together the 1 cup butter and vanilla on medium speed until well combined

Add powdered sugar and milk in batches {see full recipe below} and mix at low speed until well combined

Separate icing into two bowls; add blue food coloring to one

Add pink food coloring to the other. Mix each well and if icing is too thick add more milk as needed.

Use a piping bag to pipe the pink icing onto the Strawberry Jello cupcakes and the blue icing onto the Berry Blue Jello cupcakes.

Top with pink and blue Peeps marshmallow bunnies {or chicks if you’d prefer!}
