Easter has always been one of my favorite holidays. The decorations are SO cute- I love the pastel colors and there are so many baby animals! But one of the BEST things about Easter? The candy!!

Easter has, hands down, the best candy of any holiday- and not just one kind either but several. Jelly beans, chocolate bunnies, marshmallow chicks- and of course, chocolate eggs!
My whole family loves all the different kinds of Easter candy, but chocolate eggs are definitely one of our favorites. We enjoy them as-is as soon as they hit shelves in January, but I wanted to find a new way to enjoy them this year. That’s why I combined them with my other great love- cookies!
What kind of chocolate is in these Easter Egg Cookies?
This recipe has two kinds of chocolate- the Funfetti baking chips are primarily white chocolate and the Cadbury Mini Eggs candies are milk chocolate. That said, they do make dark chocolate Cadbury Mini Eggs so you could easily swap them if you prefer dark chocolate- or even mix both!

How can you make Cadbury Egg Mini Cookies?
To make bite sized versions of this recipe, follow the same directions but use a smaller cookie scoop {affiliate link| like this one. Instead of adding three mini eggs to each cookie dough ball, just add one right in the center!
Can the Kids Help?
Kids can ALWAYS help in the kitchen! For this recipe, I’d suggest letting them help with:
- Mixing ingredients
- Folding in the baking chips
- Using the cookie scoop- this is SO fun for kids!
- Adding chocolate eggs to the dough balls
I’d also suggest that you help a little extra with the oven of course!

Cadbury Mini Egg Cookies
These delicious cookies combine one of the best Easter chocolate candies with soft cookies and funfetti baking chips for a fun Easter or Spring treat!
Ingredients
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup butter, softened
- 1/2 cup sugar
- 1 cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1 cup Funfetti baking chips
- 2 cups Cadbury Mini Eggs
Instructions
- In a medium bowl, whisk flour, baking powder, baking soda and salt.
- In a separate bowl, beat the butter and sugars until light and fluffy. Add eggs and vanilla; continue beating until well combined.
- Fold in Funfetti baking chips.
- Place the dough in the fridge for at least 1 hour to chill.
- When ready to bake, preheat oven to 350 degrees F and line a baking sheet with parchment paper.
- Use a cookie scoop {one inch for average sized cookies} to scoop dough onto cookie sheet.
- Add 3 Cadbury Mini Eggs onto the top of each dough ball.
- Bake 10-12 minutes, until the cookies are JUST beginning to brown on the edges.
- Allow the cookies to cool for five minutes on the pan {don't skip this step!} and then transfer to a wire cooling rack to finish cooling.
- Enjoy!
