One of the things I miss the most about life pre-2020 is eating out at restaurants on a regular basis. Don’t get me wrong, we definitely still pick up take-out- I love cooking, but everyone needs a night off. But the main thing I miss about restaurants? Appetizers!
I could make a whole meal out of appetizers, and I suppose a silver lining of needing to make my own appetizers these days is that no one’s judging me if I DO make them my whole meal! These Egg Roll Cups are SO easy to make, they’re perfect for any situation that calls for apps- even dinner!

The appetizer recipe for these Egg Roll Bites is SO simple to make. It does involve cooking the chicken in a blend of spices, but it uses lots of pre-made ingredients to help cut down on cook time. That makes these a great choice whether you’re cooking a main entrée at the same time or if you just want to get these on the table as a super fast dinner option.
Substitution Questions- Can You Make Egg Roll Bites with Precooked Chicken? What About Coleslaw Mix Alternatives?
Admittedly, as much as I love my restaurant apps, I do love that I can really customize ones I make at home.
Chicken alternatives: The method below is the way I prefer to make these so I have juicy, fresh chicken seasoned just the way I like it- but if you’re looking to cut cooktime {and dishes!} down even more, you’re more than welcome to use precooked chicken and just heat it up according to package directions.
Not into chicken at all? Feel free to swap with your favorite protein- whether that’s beef, pork, or a plant-based option. Just make sure whatever you add is cooked before moving on to step 3.
Coleslaw Mix alternatives: The coleslaw mix mentioned is available in the salad section of your grocery store- it should be cabbage and carrots, without any seasonings or sauces. If that is not available at your store, you could either cut up your own cabbage and carrots {into super fine pieces!} or just go with a bag of shredded carrots in a pinch.
Soy sauce alternatives: Not into soy sauce? Whether you’re soy averse or just ran out, you can sub liquid aminos instead if you happen to have a bottle on hand.

How to Make Chicken Egg Roll Cup Appetizers
These little bites will impress at a party, but they don’t actually take that much work! Below, see the step-by-step photos for making these little appetizers. Step One: Preheat oven to 375 degrees. Use one tablespoon of vegetable oil to brush the inside of each cup in a muffin pan. Layer two wonton wrappers inside each up and brush with oil. Bake for 5 minutes, until the wrappers are just beginning to brown.

Step Two: Heat the remaining two tablespoons of oil in a large skillet. Add the chicken and season with garlic powder, pepper, ginger, and soy sauce. Sauté until cooked through.

Step Three: Add the coleslaw mix and stir. Continue cooking until the cabbage and carrots have softened, then remove from heat.

Step Four: Fill each cup with chicken mixture and return to the oven to bake for 5-8 more minutes, until wonton wrappers are browned and crispy.
Can the Kids Help?
Kids can ALWAYS help in the kitchen! For this recipe, I’d suggest letting them help with:
- Preheating the oven
- Brushing the muffin pan cups with oil
- Layering the wrappers and brushing with oil
- Adding seasoning to the chicken
- Adding the coleslaw mix to the pan {with supervision}
I’d also suggest that you help a little extra, depending on age, with:
- Baking the wrappers- both alone and with the filling
- Cooking the chicken and stirring it over heat
- Cooking and stirring the veggie mix
- Really, anything involving the oven or stovetop!
