One of my favorite things about summertime is all the fresh fruit that’s in season. Some of my family’s favorites- like watermelon, strawberries, and peaches are overflowing in the produce department right now and they’ve been a healthy and delicious way to cool off in the heat. Another summertime favorite around here is blueberries- especially when they’re in a delicious baked dessert!
While I love snacking on fresh berries, they aren’t always the easiest to bake with- and when it’s 110 degrees outside, I don’t really want to spend all day in the kitchen. This Easy Blueberry Cobbler Recipe uses pie filling instead and takes just four ingredients, a few minutes to prepare, and 30 minutes in the oven. It makes the perfect addition to the end of a picnic, a backyard barbecue, or even a 4th of July party -it is blue, after all!
Easy Blueberry Cobbler
Ingredients:
1 can (21 oz) Blueberry Pie Filling
1 box (15.25oz) Butter Cake Mix
1 stick butter
2 teaspoons ground cinnamon
Directions:
1. Preheat oven to 350.
2. Spread pie filling onto the bottom of a 9×13 pan. Sprinkle dry cake mix on top of the blueberries and spread evenly with the back of a spoon. Sprinkle with cinnamon.
3. Cut butter into thin slices, about 1/8″ thick, and place on top of the cake mix.
4. Bake for 30 minutes or until bubbly and hot.
5. Cool before serving, or serve slightly warm. Top it with whipped cream or ice cream for a little extra yum!
