I love smoothies. They’re a great way to pack in some produce easily- or to convince your kids to eat more of it! There are so many fun combinations to be made- anything from green smoothies loaded with vitamins to dessert smoothies full of rich ingredients.
It’s been hot {of course} and I recently wanted a delicious and fairly healthy smoothie that reminded me of fresh summer flavors. Something that called to mind childhood summers, spent wearing my jelly shoes and collecting snails. Blueberry Pie just seemed like the thing! This recipe would be perfect for the 4th of July {it is blue, after all} or just for a refreshing drink on a hot summer day.
You can leave out the brown sugar to make it even healthier but the brown sugar with the vanilla and cinnamon is what gives it the pie flavor and sets it apart from just a regular old blueberry smoothie so take your pick!
Blueberry Pie Smoothie
Ingredients:
¾ cup plain yogurt
¼ cup blueberries
½ tsp. vanilla extract
¼ tsp. cinnamon
1 Tbsp. brown sugar
You will also need: an ice cube tray and a blender {like like this one– or this cheaper but still good one}
Directions:
1. Scoop yogurt into ice cube tray, tap tray on counter to remove bubbles.
2. Place in freezer until solid. Remove from trays and store in a freezer bag or use immediately. {I use this method of creating yogurt cubes in order to create a cold smoothie without watering down my drink with crushed ice. Also, I hate ice. You can make up a huge batch of these and keep them in the freezer as a base for any number of creations!}
3. Place 6 cubes of frozen yogurt, blueberries, vanilla, cinnamon, and brown sugar in a blender and mix until smooth and creamy.
4. Pour into a glass, sprinkle with just a tiny pinch of brown sugar and enjoy!
