Shane loves helping in the kitchen. I let him whenever there’s something he can help with- so anything that doesn’t use the oven, the stove, a sharp kitchen tool, or raw ingredients that can make him sick. It sounds like that would eliminate a lot of recipes, but really it’s just an excuse to get a little creative in the kitchen!
My favorite things for Shane to help me make are no-bake dessert recipes. Whether we’re making a batch of no-bake cookies or just improving on an already delicious dessert, it makes the treat even sweeter when it includes time in the kitchen together.
These Funfetti Ice Cream Sandwiches are a perfect summer treat that any kid can help make! The best part is that they are ready very quickly so you don’t have to wait too long to eat them!
Funfetti Ice Cream Sandwiches
Ingredients:
–1 box of ice cream sandwiches (I used vanilla but you could use whatever flavor you wish)
-Wilton candy sticks (located in the Wilton aisle at mass retailers or craft stores)
-1-2 small bottles multi-color sprinkles (located in the baking aisle)
Directions –
1. Line a 9×13 baking sheet with wax paper or foil, unwrap all the ice cream sandwiches, and cut them in half.
2. Take a candy and stick it into the middle of each ice cream sandwich.
3. Pour the multi-color sprinkles onto a plate and ‘dip’ each side of the ice cream sandwich into the sprinkles. Use your fingers to sprinkle more on the side where you inserted the candy stick. Lay the completed ice cream sandwich back onto the lined baking sheet.
4. Repeat the process with all the ice cream sandwiches.
5. Place back in the freeze for 30-60 minutes to ‘set’.
Not only are these ice cream sandwiches perfect for a fun afternoon or after-dinner activity, but they are a cute {yet very easy} treat to have for guests as well! We’re starting to plan Shane’s birthday party menu and these just may be on it.
