Of course, you can also make this recipe with full size potatoes- these are just better for side dish purposes and they bake much faster, perfect for busy weeknights!
What are Hasselback potatoes? Why are they called Hasselback potatoes??
I’ve been eating potatoes like this for so long that I had never really stopped to think about the name until recently- and then I had to know!
Apparently the name comes from the restaurant in Sweden that invented the first Hasselback potatoes recipe! The recipe was actually called Hasselbacken but it got shortened for the sake of the name.
This recipe goes back to the middle of the last century, sometime in the 40’s or 50’s {the internet doesn’t seem entirely convinced about the exact timing so it’s hard to say for sure}.
Is there a tool to cut Hasselback potatoes?
Yes, but I don’t use it. I’m not a big fan of gadgets that only perform one task in the kitchen as they add up quickly to make a lot of clutter- and this is the epitome of a one-use gadget. Not only that, but the thing is not collapsible so it’s not something you can just tuck into a drawer when you aren’t using it- it needs dedicated cabinet space.
That said, if you just LOVE Hasselback potatoes or really HATE slicing them yourself, you can find the tool made by a variety of brands on {affiliate link} Amazon.
What is the easiest way to cut Hasselback Potatoes?
One of the biggest things I had to figure out was how exactly to cut these potatoes without slicing all the way through them.
I’ve included this information in the recipe below as well, so if you’re printing it out feel free to skip ahead, but here’s the best method I’ve found:
Place the potato on your cutting board, then place skewers or wooden spoons on either side of the potato, lengthwise, like this:
Slice through the potato width-wise, and when you get to the skewers or wooden spoons you’ll be forced to stop the cut. This will keep your slices all about the same size and will keep you from accidentally slicing all the way through it.

Can you make Baby Hasselback Potatoes in the Air Fryer?
Yes! I usually bake mine but you can totally throw yours in the air fryer. Here’s how:
Follow the first few steps of the recipe below, but then instead of putting them in your preheated oven on a baking sheet just place them in the airfryer in one layer, then cook for 10 minutes at 350 degrees.
Stop the air fryer, baste with more seasoned butter mixture, and then cook for 10-15 more minutes at 350, until fork tender.
Note that air fryers vary quite a bit so the first time you make this recipe I recommend checking them fairly often to make sure you don’t overcook them!

Mini Hasselback Potatoes

Ingredients
- 30 small new potatoes
- ½ cup butter, melted
- 2 teaspoons minced garlic
- 1 teaspoon dried parsley
Instructions
- Preheat oven to 400 degrees and line a baking sheet with parchment paper.
- Cut slits two-thirds of the way into each potato around ¼ inch apart. You can use skewers or a wooden spoon handle placed on either side of the potato to help keep the knife from slicing all the way through the potatoes- see the photos for a visual example!
- Stir together the butter, garlic, and parsley.
- Place potatoes onto the baking sheet and brush garlic butter over each potato. Season with salt and pepper.
- Bake potatoes for 20 minutes, then remove potatoes from oven and baste again with garlic butter.
- Continue to bake for an additional 10 to 15 minutes, until potatoes are cooked through. Remove potatoes from oven and baste again before serving.
