If you follow me on Twitter or Instagram, you may have noticed that I’m having a pretty awesome week. Justin & I finally got married in March {after 8 & a half years of dating… and a now almost-4-year-old} and so this week is our official “family honeymoon”. We are spending 4 days in San Diego & really doing the town!

&We’re hitting Sea World tomorrow!
But that’s just the beginning. This is the BIGGEST thing we’re doing all summer, but we still have three months of fun ahead of us. I plan on spending a lot of time in the pool, and a lot *less* time in the kitchen. Summer is grilling season & while I love to cook, I also love to take a break & let Justin do some grilling.
Hot dogs on a bun are delicious, but they get boring eventually. So I came up with a delicious new recipe for Shane’s favorite food, and a summer staple: Hebrew National Hot Dogs!
Now, my recipe actually *does* involve cooking instead of grilling, but it’s still an easy recipe. And you really could make these in a foil packet or in a basket on the grill, but Justin didn’t want to grill the other day so I just made them on the stovetop. Either way, they’re super easy!
Potatoes, Peppers & Hot Dogs
Ingredients:
-1 green pepper
-1 medium to large potato
-2 tbsp extra-virgin olive oil
-3 Hebrew National hot dogs
Directions:
-Dice green peppers & potatoes
-Boil potatoes for about 4 minutes
-Heat a large saucepan &drizzle with 2 tbsp olive oil
-Heat potatoes for about 7-9 minutes, until lightly browned on all sides
-About 1-2 minutes before the potatoes are done, mix in the green peppers
-While sauteeing the potatoes & peppers, heat hot dogs according to preferred package directions {I chose to microwave them}
-Remove from heat, add hot dogs, and mix everything together
-Serve! {Hint: It’s great with ketchup}
