Between school, Halloween, and the home renovations lately, we’ve been ridiculously busy! We’re always doing something &I swear, half the time we forget all about dinner until our bellies start growling. On those nights we need help making sure dinner is easy & gets on the table quickly.
Since I don’t want to spend an hour doing the dishes afterwards, things that help me skip a step or two in the preparation process really helps too! Things like preflavored butter available at the grocery store, like the garlic butter I found at mine, can not only save you time but inspire new meal ideas!
Garlic butter- and other preflavored butters- are so convenient. I love not having to dig through the cupboard for a “pinch” of 4 different seasonings, and not having to measure anything saves me some dishes too.
I decided to try the garlic butter for dinner the other night. I’m used to making my own garlic butter {especially for garlic bread} but wanted to see if this could help me save some time on busy weeknights. And it definitely did!

Garlic Chicken & Potatoes
Ingredients:
-8 small red potatoes
-3 TBSP garlic butter, divided
-1 pound boneless skinless chicken breasts
-1 {12-ounce} package fresh pre-trimmed green beans {we used French green beans}
Directions:
-Pierce potatoes with fork in 2-3 places. Microwave 3-5 minutes or until just beginning to soften.
-Melt 2 tbsp garlic butter in 12-inch nonstick skillet over medium-low heat just until bubbles begin to form.
-Add chicken.
-Sauté 13-18 minutes or until chicken reaches at least 165°F, is golden brown on both sides and juices run clear when pierced with a fork. Remove from skillet.
-Melt remaining 1 tbsp garlic butter. Cut potatoes into bite-sized wedges; add potatoes and green beans to skillet. Cover; cook over medium-high heat, stirring occasionally, 8-10 minutes or until potatoes are golden brown and green beans are tender.
-Slice chicken; serve over potatoes and green beans.
Notes: You can totally cut your potatoes while the chicken is cooking {if they are cool enough} and be sure to pay attention to the heat of your stove! Butter can burn easily if heated too quickly.
The whole dinner took less than 30 minutes to prepare and was delicious! I love cooking with whole foods, but we get bored of the same old recipes, so I’m really excited about this one that’s perfect for a quick weeknight meal!

Wow, how easy is this Garlic Chicken. The new Land O Lakes butter that has already packed with herbs and spices sounds very convenient. We would probably use it for chicken as well, since that’s the meat we eat about three times a week here.

Even though this is an older post, I still have not heard of Land O’Lakes Sauté Express® Sauté Starters. I love that all the seasonings are combined with the butter, making for an easier prep to any meal, Can’t wait to try all these saute starters!
