One of the best things about the holidays is just how sweet they are. I mean that literally- it seems like everywhere I turn this time of year there’s a delicious dessert to be baked, shared or eaten!
While I do my fair share of baking this time of year, I also have a million other things going on- from shopping to wrapping gifts to decorating to seeing friends and family. So I love quick & easy holiday dessert options that I can make with the kids without spending a whole lot of time on them.
These No Bake Gingerbread Truffles really fit that perfectly! Made with premade ginger snap cookies and just a few other ingredients, these are easy and super speedy to make. Not only do they make a great recipe to bake with the kids, but they’re also a great last-minute gift idea!
Are these gingerbread truffles from scratch?
Short answer- nope. I don’t know about you but I just don’t have time for that kind of thing with all the other items on my holiday to-do list.
If you want to make yours totally from scratch, go for it! But if you’re looking to save a little time and still make a delicious dessert or edible gift, keep reading.
Is this Gingerbread Balls Recipe non-dairy? What about gluten-free?
As written, this recipe is neither gluten-free nor dairy-free- but with just a couple of minor adjustments they can be!
To make these Gingerbread Balls dairy-free:
- Most ginger snap cookies are already dairy-free, but double check your package before starting.
- Swap your cream cheese for a plant-based alternative- Miyoko’s makes a great version that’s readily available at most grocery stores, or if you have a nearby Trader Joe’s they make their own delicious {and cheap!} version as well.
- Most white chocolate melting wafers you’d find locally have dairy in them, but you can use a vegan white chocolate bar broken down into pieces and melted in the same way as indicated. Or if you want to take a shortcut, you can use these dairy-free wafers available on Amazon {affiliate link}- find them here.
To make these Gingerbread Balls gluten-free:
- For the ginger snaps, find a gluten-free variety like Mi-Del {available at many grocery stores or on Amazon} or Partake.
- Double check your cream cheese ingredients but most full-fat varieties are gluten-free.
- As for the melting chocolates, try Enjoy Life white chocolate chips. These are available at most grocery stores and health stores.
- As for the sprinkles- most don’t contain gluten but may have cross-contamination so check your labels if that’s an issue for you!
How to gift these adorable 3 ingredient gingerbread truffles
If you’re giving these as a gift, wrap them in clear treat bags like these ones and tie on a cute tag! You can get a store-bought tag or use one of these free printable gift tags.
If you’re making a big batch or want something a little more polished, you could also buy a cute Christmas tin and fill it with tissue paper and then with the truffles!

Gingerbread Truffles
These easy no bake gingerbread truffles are a great last minute DIY gift idea and a great way to do some holiday baking with kids! They use premade ginger snaps to save you time and are enrobed in white chocolate and covered with sprinkles. Recipe includes subs to make it vegan {with no cream cheese} and gluten-free!
Ingredients
- 16 ounce package ginger snaps, finely crushed
- 8 ounce package cream cheese, softened
- 10-ounce package white melting wafers, melted
- Sprinkles for decorating
Instructions
Stir together the crushed ginger snaps and cream cheese until well combined.
Use a cookie scoop or tablespoon to scoop out the mixture and roll it into balls.
Place the balls in the refrigerator to chill for at least one hour.
When the balls have hardened, melt the white chocolate.
Place the cookie ball on top of a fork and hold the fork over the bowl of melted chocolate. Spoon the melted chocolate over the top of the ball until it's fully covered.
Transfer the coated ball to a piece of parchment paper and immediately top with sprinkles.
Allow the truffles to cool and harden before serving.
