Now that Christmas is over, it feels like it should be summer- but really we still have a few months of cold left. Without peppermint mochas and hot cocoas to keep me warm, I love having nice, hot dinners this time of year- including soups!
This Slow Cooker Minestrone Soup recipe will keep you warm all winter long. It’s simple enough to make on a busy weeknight, especially because you can prep it ahead, throw it into the slow cooker, and go about your business. It makes a lot though, so it’s great for weekend dinners with family, too.
Slow Cooker Minestrone Soup
Prep time: 15 minutes
Cook time: 4 – 6 hours
Serves: 8 servings
Ingredients:
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 carrot, chopped
- 2 large celery stalk, chopped
- 2 teaspoons dried basil
- 2 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 32 oz can diced tomatoes
- 2 tablespoons tomato paste
- 2 bay leaves
- 4 cups low sodium vegetable broth
- 1 can of red kidney beans
- 1 can of cannellini beans
- 1 1/2 cups dried small shell pasta
Instructions:
1. In your slow cooker, combine all of the ingredients except for the pasta.
2. Cover and cook on low for 6 – 8 hours or high for 3 – 4 hours.
3. 20 minutes before serving, bring a large pot of water to boil and add pasta. Cook the pasta for 8 -10 minutes, until cooked through.
4. Drain the pasta and stir it into the slow cooker.
Slow cooker Tips
If you’re looking to buy a slow cooker, I have this Crock-Pot. You don’t have to get Crock-Pot brand though, there are a lot of great ones out there now {some that multi-task, even}.
Another recommendation I have is to use slow cooker liners. I almost always forget to use them, and always regret forgetting them. They make clean up SO much easier, especially for things like soup!
