This time of year the weather is so unpredictable. Some days it’ll feel like fall, with the sun shining down and a crisp breeze coming through. Other days, though, it feels like winter has already arrived, leaving us bundled up and struggling to stay warm since we haven’t had any time to adjust to it.
On those days, I love having a nice, hot bowl of soup. When my toes won’t warm up no matter how many sweaters I put on {or how many times I sneak the thermostat up when Justin isn’t looking}, nothing warms me up like soup. This Wonton Noodles, Pork & Spinach Soup does the trick and includes lots of veggies, too!
Wonton Noodles, Pork & Spinach Soup
Ingredients:
1 package of wonton noodles
3 cups vegetable or chicken stock
1 cup water
1 Smithfield Pork Loin Filet
1/2 cup red cabbage, shredded
2 cups spinach
1 small onion, diced
1 clove garlic, minced
2 tablespoons, green onion, chopped
2 tablespoon low-sodium soy sauce or liquid amino
1/2 teaspoon sesame oil
1 teaspoon garlic black pepper
Sea salt, to taste
Freshly cracked black pepper, to taste
2 tablespoons olive oil
Directions:
1. Prep Smithfield Pork Loin filet by placing into a large Ziploc bag, but do not seal bag. Using a butcher’s mallet or the bottom of a cup firmly strike the meat to tenderize. Once meat is flattened, remove from bag and coat with olive oil and season well with salt and pepper.
2. Warm 1 tbsp olive oil in a skillet over medium-high heat. When oil is hot, add pork and sear on both sides {about two minutes per side}. Reduce temperature to low and cook for four more minutes. Remove from heat, cover with lid, set aside.
3. Wipe skillet clean and add 1 tbsp of olive oil over medium heat. When oil is hot, add onions and sauté until translucent, about 4 minutes. Add garlic and sauté for 1 more minute. Remove from heat and set aside.
4. In a large stock pot, add a cup of water over high heat. When water starts to boil, add red cabbage and cook for 5 minutes. Remove from heat and add spinach and let the spinach steep for 4 minutes.
5. Add vegetable stock and wonton noodles, place the stock pot on the stove, and bring to a boil. Remove from heat and add onion and garlic mixture. Add green onions. Cover pot and let the soup steep for 10 – 12 minutes. Serve hot and enjoy!
Smithfield is a great choice for pork dishes because it’s easy to get {since it’s available at Walmart}, from animals raised in the USA, and never contains steroids, hormones, or artificial ingredients. They have so many different cuts to choose from and my store had the pork loin in several flavors, making it that much easier to get dinner on the table fast!
