The first day of fall is this week and while it’s still been summer weather around here, signs of the changing seasons are all around. The trees aren’t quite as green as usual, the stores are full of holiday decorations, and of course- pumpkin is everywhere!
I don’t mind the huge surplus of pumpkin flavored things that happens this time of year. I spent my whole life afraid to try pumpkin and when I finally did I loved it so much I knew I needed to make up for lost time.
For the last couple of years I’ve been on Team Pumpkin & since it really is versatile, I’ve been trying new recipes with it all the time. The latest one is perfect for on-the-go snacking, which is exactly what we need these days when our schedule is jam-packed with fun fall activities!
Pumpkin Pecan Bites
Ingredients:
15 oz can of pumpkin
1 & 1/2 cups rolled oats
3 cups pecans {can be halves or slices}
1-2 tsp pumpkin pie spice
1/3 cup honey
Directions:
1. Combine all the ingredients in a food processor and pulse until combined. Scrape down the sides of the bowl, if needed and continues to pulse until blended. If you feel the mixture isn’t ‘sticky’ enough add a little bit more honey and pulse.
2. Place the mixture in the fridge for 20 minutes to set.
3. Remove from the fridge and roll into 1-2″ balls (see photo) and place on a cookie sheet.
4. Place back in the fridge to allow the bites to firm up.
5. Serve.
{When not serving keep covered in the fridge. Makes approximately 2 dozen bites.}
These bites are great as a dessert {with built-in portion control!}, a source of quick energy, or just a yummy snack. They are so easy to make that even kids can help! {Just make sure to do the food processing for them, depending on their age.} Shane loves to help me in the kitchen so for these, his job is to help me roll them into balls!
