A few weeks ago I shared a favorite fall recipe, Wonton Noodles, Pork & Spinach Soup. Today I’m sharing a more festive way to enjoy Smithfield pork!
Below is a sweeter take on pork loin that compliments the sweetness of the season. The apple cinnamon combination is one of my favorites and while you’d seldom think to combine it with meat instead of dessert, it’s really quite a treat! This recipe is so easy to make and is ready in under an hour, so it’s great for the holidays or just a weeknight meal.
Ingredients:
1-2 lb. Smithfield Original Pork Loin
2 medium apples, peeled and sliced
3 tbsp honey
1 tbsp ground cinnamon
3/4 cup chicken stock
A few pinches of brown sugar to taste
Directions:
1. Preheat oven to 400 degrees.
2. Mix honey, cinnamon and chicken stock in a small mixing bowl and set aside.
3. Place Smithfield Pork Loin in a casserole dish and pour chicken stock mixture on top and on sides. Add apples to casserole dish, making sure they don’t cover the pork loin or each other.
4. Sprinkle a little brown sugar on pork loin and apples to taste {and a little bit more cinnamon if desired}.
5. Bake uncovered for 40-45 minutes or to an internal temperature of 160 degrees.

The recipe never says what you are supposed to do with the apples.

Thanks for catching that! I just updated the post but you just put them next to the pork loin in the casserole dish while it’s in the oven.
