Pumpkin Spice Cake Mix Cookies

Pumpkin spice  all the things!

Sure, pumpkin spice lattes are great- but have you had pumpkin spice cookies? These easy Pumpkin Spice Cookies are made using cake mix, which not only cuts down on prep time but also makes them extra fluffy and delicious!

Ingredients

– 8 ounce package cream cheese, softened – 1/2 cup butter, softened – 1/2 cup pumpkin puree – 1 box yellow cake mix – 1 tablespoon pumpkin pie spice For the Frosting: – 1 jar cream cheese frosting – 2 teaspoons pumpkin spice

HOW LONG CAN PUMPKIN SPICE COOKIES SIT OUT? These will hold up great as long as you don’t frost them until it’s time to serve them. If you're just making the cookie part and leaving it as-is, you can bake them up to 7 days in advance.

CAN YOU REPLACE THE EGG IN THE CAKE MIX WITH PUMPKIN? Yes! This recipe calls for pumpkin and no eggs. Pumpkin is a great alternative to eggs in baking recipes as long as it’s used properly. It adds a lot of nutrients and some depth to all kinds of recipes!

HOW CAN I MAKE THESE DAIRY FREE? Just sub out the butter and cream cheese for dairy-free versions and double check that your cake mix doesn't contain dairy {most don't}.

These cookies can be left as is or paired with some sweet cream cheese frosting for the ultimate fall treat!
