Around here, weekends come with pancakes. I don’t remember when it started exactly, but a few years back Justin started taking over the griddle and making pancakes on any weekend where we didn’t have to rush somewhere first thing in the morning.
In fact, we love pancakes so much in this house that when Shane got his own cookbook for Christmas {this one}, the very first recipe he made was a batch of pancakes from scratch!
Usually the pancakes we enjoy are just plain- with some chocolate chips, of course- but sometimes we want to get a little fancy. Enter this delicious Peanut Butter Banana Oat Pancakes recipe!
What’s in these pancakes that makes them special?
These are not your everyday pancakes- these flapjacks have a lot of delicious ingredients like peanut butter, chocolate chips, a pinch of cinnamon, and of course, bananas.
Are these pancakes healthy?
Well, that depends on your definition of healthy. They have a lot of ingredients with benefits, like bananas, oat flour, and protein-packed peanut butter. That said, they also have some sugar and chocolate chips, which you can omit if you’re looking to stay on the healthier side. My advice? Enjoy them just like the recipe calls for- just don’t eat a whole stack to yourself.
Is this a quick pancake recipe?
These pancakes take about 20 minutes to make from start to finish, so they don’t take an excessive amount of time but I know that I could never personally whip these up in time on a school day. If you get up earlier than the kids and have time to throw them on the griddle, that’s awesome. That’s not me though, so these are weekend pancakes for us! {If you really wanted them for a weekday, you could always make them ahead and freeze them!}
What tools do you need to make these pancakes?
Just like any pancakes, you can make them in batches in your regular pan but it’s a lot faster if you use an electric griddle. {We have this one.}
I also recommend a good spatula, and some mixing bowls with a rubber grip on the bottom {especially if you’re clumsy like me}.
Now, on to the recipe!
Peanut Butter Banana Oat Pancakes
Makes 12-15 pancakes
Prep time: 5 minutes
Cook time: 20 minutes
Ingredients:
1 ½ cup oat flour
1 teaspoon baking soda
½ teaspoon cinnamon
3 bananas, smashed
1 egg
½ cup milk
1/3 cup brown sugar
¼ cup peanut butter
2 tablespoons vegetable oil
2 teaspoons vanilla
½ cup mini chocolate chips
Instructions:
- Preheat a griddle or skillet over medium heat.
- In a large mixing bowl, whisk together the oat flour, baking soda, and cinnamon. Set aside.
- In separate bowl, mix together the smashed bananas, egg, milk, brown sugar, peanut butter, vegetable oil, and vanilla.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the chocolate chips.
- Grease the griddle with nonstick cooking spray. Use a ¼ cup to scoop the batter onto the hot griddle.
- Cook the pancakes until the edges begin to brown, then carefully flip to cook the other side.
- Add syrup if you want and enjoy!
