One of the holiday traditions in our family is to have a special breakfast on Christmas. It’s never anything too crazy, since we’re all busy playing with our new toys or exhausted from assembling those toys the night before. But we like to have something we don’t usually get to have to make the day a little extra special.
Usually, we just do something like cinnamon rolls from a tube, and those are delicious. But this is an even more fun option that I’m thinking is going to have to become a new family tradition- Hot Cocoa Pancakes!
My boys go NUTS for pancakes every time we make them {as long as they have chocolate chips!}- and we’ve been drinking a lot of Hot Cocoa lately. So why not combine the two and enjoy the ultimate Christmas breakfast- Hot Cocoa Pancakes?!
Hot Cocoa Pancakes
Ingredients:
1 cup flour
2 packets hot chocolate mix
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 egg
1 ¼ cups milk
2 tablespoons vegetable oil
½ teaspoon peppermint extract
½ cup mini chocolate chips, plus more for garnish (optional)
Crushed peppermint, mini marshmallows, whipped cream, and chocolate syrup for garnish (optional)
Directions:
- Preheat skillet or griddle.
- In a large bowl, whisk together the flour, hot chocolate mix, baking powder, baking soda, and salt.
- Add the egg, milk, vegetable oil, and peppermint extract. Whisk until just combined.
- Fold in the chocolate chips.
- Grease skillet or griddle with nonstick cooking spray or butter and pour batter onto hot surface. Cook until the pancake begins to bubble, then flip to cook the other side. Continue until all batter has been used.
- Serve with mini chocolate chips, mini marshmallows, whipped cream, crushed peppermint candy, and chocolate syrup (optional).

These Hot Cocoa Pancakes are so delicious and extra magical during the holidays- but the good news is that they barely take any more work than a regular batch of boring other-364-days-of-the-year pancakes!
