We all know that bees are important, but we never really stop to think about why. We might briefly think of them pollinating flowers and making honey, but they are responsible so much more than those. Many of the foods that we eat every day are only available because of the hard work of bees, and it’s important that we keep them around and thriving!
Some of the foods we can thank bees for include apples, avocados, beans, grapes, vanilla, and perhaps most importantly- coffee.
To celebrate National Honey Month {which is happening right now!}, I am finally sharing a recipe that has been a favorite in our home for over a year now. This Pressure Cooker Honey Garlic Chicken recipe hits all the right spots- it’s easy to make, it has lots of protein and veggies, and it’s delicious!
Pressure Cooker Honey Garlic Chicken
Ingredients:
1/2 cup Honey
1/2 cup low sodium soy sauce
1 cup low sodium chicken broth
6 whole garlic cloves; 3 minced garlic cloves
4 Tyson chicken thighs {bone-in, skin-on}
1 cup Jasmine rice
1 1/2 cups water
1 TBSP butter
8 oz. broccoli florets
Olive oil
Salt and Pepper, to taste
Directions:
1. Add honey, soy sauce, garlic, and chicken broth into pressure cooker and whisk to combine. Add chicken to pot.
2. Set pressure cooker to high pressure and set to 15 minutes. Be sure to c check that your valve is sealed!
3. While chicken cooks, add water and rice to a small saucepan and bring to a boil. Once boiling, lower heat to simmer for 15 minutes. Once done, fluff with a fork and add butter, then mix well.
4. While chicken and rice are cooking, heat a drizzle of olive oil in a large pan over medium-high heat. Add broccoli, season with salt and pepper, and cook, stirring, until soft and slightly charred {about 5-6 minutes}.
5. When pressure cooker is done, be sure to carefully vent the steam. Add rice to plates, top with chicken and broccoli. Use a ladle to get a little bit of extra sauce out from the chicken- it is so worth it!
It sounds like a lot to do, but since the chicken and rice are both set-it-and-forget-it, it’s actually a very simple dinner. It all comes together at almost exactly the same time and it’ll make your house smell amazing for hours afterwards, too!
We love this recipe for it’s great taste, but I love it even more now that I know it’s connection to the ultimate pollinators- bees. Not only is the honey used in the recipe from them, but the broccoli is, too.
