I cook dinner almost every day of the week. To keep it from getting boring, I switch it up a lot in the kitchen- using different cuisines, different cooking styles, and different ingredients. But one of the ingredients that ends up in almost every dinner? Onions!
I use all different kinds of onions, but my favorite kind- hands down- is sweet onions. Sweet onions take many meals up a notch and let me feel like I’m living the sweet life, even if I’m just having dinner at the table with my family. {Although to be fair, what’s sweeter than time with family?}
My favorite variety of sweet onions, Vidalia onions, comes out this time of year and I use it in everything. If you’ve never cooked with Vidalia onions, you’re missing out!
Vidalia onions are not a flavor, but a very specific kind of onion. Vidalia onions come from 20 South Georgia counties, where the perfect combination of weather, water, and soil unique to the area results in delicious, sweet onions. They are only available from April through August each year, and luckily you can find them nationwide during that time.
Vidalia onions add the perfect sweetness to any meal, and are incredibly versatile in meals. They go great in salads, they are commonly seasoned and eaten on their own, and they make a great addition to more common meals, like pizzas, casseroles, or in my case- burgers!
I love using carmelized onions on my burgers, but I especially love it during the summer, when I can use Vidalia onions. They are absolutely delicious when simmered for a bit in some balsamic vinegar and with just a touch of salt to bring out the sweetness even more. This Sweet Onion Jam is the perfect topping for any kind of burger, providing just the right amount of sweetness. I love adding a lot to my burger so that when a little bit falls out and onto my plate, I can eat the onions on their own at the end!
Sweet Onion Jam Recipe
Ingredients
1 Vidalia Onion
1 Roma Tomato
Salt
Pepper
1 tsp Sugar
1 1/2 TBSP Balsamic Vinegar
Directions
Peel, halve, and thinly slice Vidalia onion. Dice tomato.
In a medium skillet over medium-high heat, add a drizzle of olive oil. When heated {about 20-30 seconds} add onion.
Add salt, pepper, and sugar and stir to coat all the onions. Cook, stirring, for 5 minutes.
Add tomato and balsamic vinegar and stir. Continue cooking until soft and until it resembles a jam, about 5 more minutes. Add more salt and pepper to taste.
Use the Sweet Onion Jam as you’d like, including as a side to go with steak or chicken, or with mashed potatoes. And of course, it’s great on burgers, including plant-based burgers like I used!
If you love cooking with onions, you need to try out Vidalia onions. Even if you’re new to utilizing onions in your cooking, Vidalia onions are a great one to start with since their low amount of pyruvic acid makes them one of the mildest onions. I can even sneak them into meals for my picky eaters and they don’t even notice!
