The weather has already started to heat up around here, and soon it’ll be over 110 degrees almost every day. One of our favorite ways to keep cool in the extreme heat is to spend our summer days in the pool! My in-laws live just a few minutes away and have a great pool, so we go over there often to swim, spend time with them, and eat!
When we’re having a pool day, the last thing I want to do is get out of the pool before my family to make dinner in the kitchen. I don’t want to miss the fun! Instead, we tend to grill on pool days. We try different sauces for our chicken sometimes, but I really love making homemade marinades. It’s so much easier to get the flavor exactly how we want it- and it keeps it new and fresh, too. I recently made a Garlic Citrus Marinade and it was a huge hit with everyone, from the kids to my in-laws.
Garlic Citrus Marinade
Ingredients:
1 lemon
1 lime
2 navel oranges
10 cloves minced garlic {I used the kind in a jar in the produce section}
1/3 cup vegetable oil
1/4 tsp garlic powder
1/2 tsp onion powder
1 tbsp sugar
½ tsp dried basil
½ tsp dried parsley
½ tsp salt
Directions:
1. Zest lemon, lime, and orange- you want about 1 tsp of
zest from each one.
2. Use a hand juicer to extract juice from lemon, lime, and orange.
3. Add juices, seasonings, and oil into a gallon storage bag and add up to 6 Tyson Boneless Skinless Chicken Breasts.
4. Allow chicken to thaw in the fridge according to package instructions.
5. Grill until chicken is cooked through and reaches 165 degrees Fahrenheit.
This recipe is so easy- you just throw together some ingredients in a bag, let the chicken soak in all those delicious flavors as it thaws, and ta-da! A delicious, summery marinade that keeps the chicken moist even on a hot grill in the hot sun!
While the grown-ups love the chicken, the kids REALLY love when I set up a Ball Park Beef Franks hot dog bar! I put out the buns and Ball Park hot dogs, along with a wide variety of toppings- ketchup, mustard, relish, sauerkraut, and onions. The kids don’t usually add a lot to their hot dogs, but they still love being able to serve themselves poolside! The grown-ups tend to get a little more creative, and it’s always a nice and easy lunch or dinner option that we can enjoy in just minutes.
