This week at Zac’s school, they are celebrating Reading Week! Many schools across the country celebrate around this time of year in honor of Read Across America, an annual reading awareness and motivation event that happens around Dr. Seuss’s birthday, March 2nd. {Shane’s school celebrates in March, so if your child’s school isn’t celebrating yet, keep an eye out!}
We have been celebrating Reading Week as a family for years since Shane has been participating in it every year at school. This is Zac’s first year in school though {he’s in Pre-K}, so it’s extra special for him this year as it’s his very first official Reading Week!
Today was the kick-off of the event and also an extra special day for us as I had the chance to go in and read to Zac’s class. I wasn’t sure what to read but then remembered one of my absolute favorite books from when I was little- Green Eggs and Ham!
This classic children’s book came to be after the co-founder of Random House bet Dr. Seuss that he couldn’t write a book using fewer than 50 words- the book contains exactly 50 unique words!
In honor of Reading Week and one of my favorite childhood books, I just had to share these adorable Green Eggs & Ham cupcakes! They are simple to make and can really use any type of cake, so feel free to use any flavor you’d prefer!
Green Eggs & Ham Cupcakes
Ingredients:
12 of your favorite chocolate cupcakes
½ stick butter, softened
1 cup confectioners’ sugar
1 tbsp milk
Black decorating frosting
2-3 oz. green fondant
Yields: One dozen decorated cupcakes
Directions:
1. Once your cupcakes have baked, allow to cool completely on a wire rack.
2. Use an electric mixer to beat together butter, sugar and milk. Beat on medium speed.
3. Gradually increase the speed to high and once the mixture is smooth and well-combined, your buttercream is ready.
4. Scoop the buttercream into piping bags, with a Wilton tip #10attached.
5. Frost each cupcake with a thin layer of frosting, making it look like the yolk of an egg.
6. If necessary, use an offset spatula to smooth out the frosting on each cupcake.
7. Attach Wilton tip #4 to your black decorating frosting and frost out an outline on the circumference of each buttercream ‘egg yolk.’
8. Roll out 12 ½ inch spheres from your green fondant. Flatten it slightly and place in the middle of each buttercream ‘egg yolk.’
These would be the perfect cupcakes to bring to your child’s class if they are also celebrating Reading Week! They also make for a fun way to connect a book to real life, even just at home. And I bet these cupcakes are a lot tastier than real Green Eggs & Ham- although, I can’t say I’ve ever tried the real thing {don’t tell Sam-I-Am}.
