Most mornings, I’m scrambling to get everyone out the door on time. Justin is at work hours before we even wake up, so it’s up to me to make sure the boys and I are all ready to get to school on time. This year, Zac is in school too {and each kid is at a different school} which means three days a week we have to get in the car even earlier than usual. The last thing I have time for between my alarm ringing and the school bell ringing is to make a healthy breakfast!
Or at least, that was the case- until I discovered that I could make a delicious, fluffy, filling egg breakfast in the microwave in just 60 seconds. AND I can even take it to go if we are really running late. So how do you make this breakfast that is so perfect for busy mornings? Read on and I’ll show you- it’s easy!
Caprese Egg Breakfast in a Jar
Ingredients:
2 eggs
1 TBSP milk
Pinch of salt and pepper
3-4 cherry tomatoes, halved or quartered
2 leaves fresh basil, cut into thin strips
1 slice fresh mozzarella, cut into chunks
You’ll also need: 12 oz or larger* Mason Jar {with lid if you’ll be taking it to go}
Directions:
1. Crack your eggs right into the jar and add milk and salt. Stir well or close the lid of the jar and shake to mix well.
2. Remove the lid and place into the microwave for 60 seconds. Be sure to watch it as the eggs get really fluffy really fast!
3. Check to see if eggs are cooked completely- if they are not, microwave for 15 second increments until they are done. I have never had to do it more than 1 time, but if your eggs are really big you may have to.
4. Once your eggs are done, add the basil, tomatoes, and mozzarella on top. Enjoy immediately or when you have two seconds to yourself.
Since I’m already rushed in the morning, I like to have a little container with pre-cut fresh mozzarella, basil, and cherry tomatoes in the fridge so I don’t have to try to find time for that in the morning!
Justin and I are both fans of the Caprese Egg Breakfast, but he sometimes likes to have a little bacon with his eggs. I make a different {and just as easy} breakfast for him!
Bacon and Cheddar Egg Breakfast in a Jar
Ingredients:
2 eggs
1 TBSP milk
Pinch of salt and pepper
Sprinkle of cheddar cheese
1 strip bacon, cut into small pieces
You’ll also need: 12 oz or larger* Mason Jar {with lid if you’ll be taking it to go}
Directions:
1. Add ALL ingredients into the mason jar. Be sure to shake well to combine all ingredients.
2. Remove the lid and place into the microwave for 60 seconds. Be sure to watch it as the eggs get really fluffy really fast!
3. Check to see if eggs are cooked completely- if they are not, microwave for 15 second increments until they are done. I have never had to do it more than 1 time, but if your eggs are really big you may have to.
4. Enjoy!

*I used 8 oz. jars and had overflow issues so I actually recommend a 16 oz. if you have it, but a 12 oz. will do.
