Now that the kids are back in school, for the first time in 9 years I have the house to myself three days a week. It’s eerily quiet and I’m still getting used to it! I miss those rugrats when they’re at school but so far, they’re really liking everything this school year.
One thing I don’t miss when they’re at school? Having to share my snacks! Sometimes I need a quick pick me up during the day and these Monster Cookies do just the trick- they only take a few minutes to make and you can make them right in a mug, so you won’t even have many more dishes to do. It’s definitely a lot easier than whipping up a whole batch of cookies!
And, if your kids are as lucky as mine tend to be- they make a really great after-school snack, too! They may not be the healthiest snack option {although they do have peanut butter, so yay protein!} but everything in moderation, right?
Monster Cookie for One
Ingredients:
2 tbs. peanut butter
1 tbs. butter, softened to room temperature
2 tbs. packed brown sugar
1 tsp vanilla extract
1 large egg yolk {discard the egg white}
2 TBSP flour
1/4 C. quick cooking oats
1/4 tsp. baking soda
1/8-1/4 C. mini M&M’s
Directions:
1. Add the peanut butter, softened butter, brown sugar, vanilla and egg yolk to the mug and stir to combine the ingredients.
2. Add in the flour, baking soda and oats.
3. Finally, add in the M&M’s.
4. Heat in the microwave for 1 minute. If not cooked all the way through, heat in 10 second increments until it is cooked through.
5. Allow to cool a few minutes before enjoying.

I love that this is a recipe for one! I’m always craving something sweet, and it’s nice not to have the temptation of a whole big batch of cookies sitting on the counter, lol!

What’s 1/8 cup of flour? differently, i guess. Don’t own 1/8 cup measurement. thanks

Sorry about that, my set does have a 1/8 so I’ve never thought about it, but 1/8 cup is equivalent to 2 TBSP. Hope that helps!
