Who else is loving all things rainbow and unicorn right now? I thought I was alone in my obsession- at least in my household- but recently Zac has taken a huge liking to rainbows too! When I saw a friend of mine post these unicorn sprinkles donuts, I knew I HAD to share them- and make them- because they’re just too cute to keep to myself!
The recipe for the rainbow donuts is below and at the very bottom of the post, you can get the how-to for making your own Unicorn Sprinkles Mix. If you don’t want to get all the different sprinkles to make the unicorn sprinkle mix, you can always grab this mix on Amazon or really, whatever sprinkles you have on hand. {That said, the mix does make a LOT and you can keep it on hand for other uses!} If you ask me, as long as you have rainbows, sprinkles, and donuts all together, it’s already magical!
Unicorn Sprinkle Donuts Recipe
Makes 10 doughnuts
Donuts Ingredients:
2 tsp unsalted butter {room temp.}
3/4 C granulated sugar
2 eggs {lightly beaten}
1 tsp vanilla extract
3/4 C buttermilk
2 C all-purpose flour {sifted}
2 tsp baking powder
1/2 tsp salt
Neon food coloring {pink, blue, green, and purple}
Glaze Ingredients:
2 cups powdered icing sugar
1/2 cup milk
1 C Unicorn Sprinkles Mix {see bottom of post}
Directions:
1. Preheat oven to 350 degrees. Spray your donut pans with a non-stick baking spray.
2. In a large mixing bowl, add together the flour, baking powder, and salt. Stir to combine and set to the side.
3. In a separate bowl, add the buttermilk, sugar, egg, butter, and vanilla. Stir until fully combined.
4. Add your dry ingredients to the wet ingredients. Stir until combined.
5. Divide the batter into four smaller bowls. Add three drops of the neon pink food coloring into one bowl and stir until the color is well blended.
6. Add three drops of the neon blue food coloring into one bowl, stir until the color is well blended, then repeat with green in another bowl and purple in another bowl.
7. Spoon each colored batter into a separate pastry bag.
8. Make a large dot with the pink batter in the first well. Make a large dot with the blue batter, slightly overlapping the pink batter in the first well. Make a large dot with the green batter next to the blue batter in the first well. Make a large dot with the purple batter next to the green batter in the first well. Repeat the same process in the remaining wells.
9. Bake at 350 degrees for 9-10 minutes until a toothpick inserted comes out clean. Let cool 10 minutes.
10. Add your glaze: In a medium-sized mixing bowl, whisk together the powdered sugar and milk. Place a piece of foil under the wire rack with the donuts to catch any glaze. Pour your glaze from the bowl onto the donuts.
11. Add the sprinkles immediately after the donuts have been glazed.

Unicorn Sprinkle Mix:
Use 1 pouch each of light green, light blue, hot pink, yellow, purple, and orange nonpareil’s AND “jimmies” sprinkles {grab these on Amazon or at the craft store}. Combine all 12 pouches into a bowl and mix until completely combined! This will make a BIG batch of Unicorn Sprinkles that you can use for dozens of batches of donuts- or anything else that needs a little more magic!
