These days, we’re always on the go. Even when I’m not shuttling Shane off to school or picking him up, we’re always going somewhere- whether it’s a PTA meeting, a lunch date, visiting with family, or hitting the park. Since we’re always going somewhere, I need snacks that I can grab and take with me anywhere that my whole family will like- like these Cranberry Chocolate Chip Energy Bites!
I’ve made a similar version for a long time and they’re always a huge hit with my family, but when I was at CVS a couple of weeks ago I had an idea. Inspired by the huge amount of choices of healthy snacks on their shelves, I decided to try a bit of a seasonal twist and add some dried cranberries to the mix. They’re one of my favorite dried fruits to snack on and I knew they’d make an excellent addition to the energy bites- and they turned out even better than I expected!
Cranberry Chocolate Chip Energy Bites
Ingredients:
1 cup old fashioned oats
1/3 cup peanut butter
1/4 cup honey
1/4 cup shredded coconut
1/4 cup dried canberries
Chocolate chips as desired {I just sprinkled a few in but probably used around 1/8 cup}
Directions:
1. In a medium-sized bowl, mix all ingredients with a big wooden or silicone spoon. {Tip: The peanut butter will be easier to work with if you warm it up for about 15-20 seconds before adding it.}
2. Roll mixture into tiny balls- it will be extremely sticky so the best way to do this is to get your hands very slightly damp {NOT dripping!} and use your hands to roll the balls.
3. These balls may be enjoyed immediately, but are worth the wait if you decide to refrigerate them first. They are usually cold enough within about 20 minutes- and they fall apart a lot less when they’re cold, too.
Yield: 8 energy bites
I love this recipe for so many reasons. It’s a total crowd pleaser- my entire family loves it, from my picky toddler to my hubby. It’s also very quick and easy to make- it doesn’t take a lot of dishes or a lot of time, which is great because I’m always short on time and my kitchen has more than enough dirty dishes already. It’s also easy to shop for, since all of the ingredients are available at my local CVS!
Even though this recipe only takes a few minutes to make, I still don’t always have the time required. That’s why I’m so glad that when I’m out and about, I can always stop at CVS to grab a quick and healthy snack!
