We eat a lot of bars around here. They are easy to take with us wherever we go and since we’re often on the move, they’re perfect. The problem is that since we eat them a lot, they get kind of expensive. That’s why when time permits, we make our own bars!
We use several different recipes to make our bars because they are super versatile. {I’ve even shared a Paleo Almond Apricot Breakfast Bar Recipe in the past!} One of the newest combinations around here is this Dark Chocolate Almond Energy Bar Recipe!
Dark Chocolate Almond Energy Bars
Ingredients:
1 cup almonds
8-10 medjool dates, no pits
4 Tbsp cocoa powder
1/4 cup chocolate chips
1 tsp vanilla extract
Directions:
1. Combine all ingredients in a food processor and process until the mixture turns into a big clump. If it doesn’t, add 1 tbsp of water.
2. Line a baking dish with parchment paper, using enough paper that it sticks out the sides too.
3. Press the mixture evenly into the dish and against the sides- so when you slice it that edge will be straight.
4. Cover with a plastic wrap and stick it in the fridge for about 30 minutes. {The mixture is super sticky but putting it in the fridge firms it up and makes it much easier to work with!}
5. Use a large knife or a pizza cutter to cut into bars.
The bars last in the fridge for about 2 weeks, so they’ll be ready to grab on the way to work or to bring the kids to school!
