I have a total sweet tooth, and as much as I try to be good- sometimes I just need something sweet. This time of year gets me especially, with all the candy everywhere and pumpkin flavored everything! To try to keep myself from overindulging, I like making individual servings of some of my favorite desserts whenever I can. One of my favorite tricks for this is to make mug recipes!
You can make all kinds of things in a mug, from scrambled eggs to chocolate chip cookies. This particular recipe is for one of my favorite fall treats- pumpkin cake! Once you have the ingredients in the mug, you’ll have a delicious, gooey cake in just 90 seconds. This recipe is fast, easy, sweet, indulgent- and portion-controlled. Does it get any better than that?
Pumpkin Mug Cake
Ingredients:
4 tbs. flour
1/2 tsp baking powder
1 tbs sugar
3 tbs. canned pumpkin
2 tbs. milk
1/4 tsp. cinnamon
Directions:
1. Add the dry ingredients {flour, sugar, baking powder and cinnamon} to your mug and stir to combine the ingredients.
2. Add in the canned pumpkin and milk, milk well.
3. Heat in the microwave for 90 seconds. If it’s not cooked all the way through, just heat it for another 10 seconds until cooked through. Watch it carefully as it can become rubbery if you overcook!
