School starts around here in less than a week and starting Sunday night, for the first time ever, I’ll be making Shane’s lunches for school! I am so excited, but I had a realization yesterday- this kid is picky. One of the only things that he likes is granola bars- especially ones made at home!
These no bake chocolate chip peanut butter granola bars are delicious and easy to customize. You could easily add some coconut, skip the chocolate chips, add candies for a special treat- whatever you want! I like them just like this, though:
No-Bake Chocolate Covered Peanut Butter Granola Bars
Ingredients:
1 C. quick cooking oatmeal
1/4 C. creamy peanut butter
1/4 C. coconut oil
1/4 C. honey
1 tsp. vanilla extract
6 oz. chocolate chips set aside
sandwich baggie
kitchen scissors
Directions:
1. Add the honey, peanut butter, coconut oil and vanilla extract to a medium saucepan and heat on low until smooth and creamy.
2. Add in the 1 cup of quick cooking oatmeal and mix well to completely coat.
3. Spray a 9×9 or 8×8 baking dish with non-stick cooking spray.
4. Pour the oatmeal mixture into the baking dish and use the back of the smooth to evenly spread out in the pan.
5. Refrigerate for 1 hour to set.
6. After the bars have set, melt the 6 oz of chocolate chips in a microwave safe dish in 30 increments until melted.
7. Scoop the chocolate into a small sandwich baggie and snip the corner of the bag with a pair of kitchen scissors.
8. Gently drizzle the melted chocolate over the peanut butter bars.
9. Allow the chocolate to set and cut into bars.
{Makes approximately 20 bars}
Of course, if you’re planning on sending this to school with your little ones you’ll want to make sure their school doesn’t have a peanut butter/peanut product ban and remind your child not to share with others in case of allergies. Of course, these bars are too good to share anyway! If all else fails, these are a great weekend or after-school treat, and they freeze well so you can make one batch and have granola bars for weeks!
