Today, I brought Shane to school for the second-to-last Monday of the school year. He still has almost three weeks left, but now there’s only one more Monday since next week is Memorial Day! Yay for long weekends- for the next 3 months!
Speaking of Memorial Day, I am so excited. As long as the Vegas weather can get itself together we should be able to hit the pool and BBQ with the in-laws. I look forward to Memorial Day every year as the unofficial kickoff to summer!
Last summer, Justin was on the Paleo diet, so we had a lot of Open Faced burgers! This one would be delicious between a bun, too, but the fruit salsa on top makes it very fresh tasting and I didn’t miss the bread at all!
Ingredients:
-1 lb ground turkey
-Iceberg lettuce leaves
-Onion powder, garlic powder, and red pepper flakes to taste {I used 1/2 tsp onion powder, 3/4 tsp garlic powder, and 1/4 tsp red pepper flakes but adjust according to your preferences!}
-1 red bell pepper, chopped
-1 cup chopped pineapple {use canned or precut pineapple for a weeknight shortcut!}
-1 cup chopped mango
-3-4 green onions
-1 tablespoon lemon juice
-1 tablespoon lime juice
-Fresh cilantro to taste
To make burgers:
1. Combine ground turkey with spices in a medium sized bowl. Mix well.
2. Form into 4 patties.
3. Grill burgers as you normally would, either on an outdoor grill {preferred}, an indoor grill or a grill pan.
4. Serve on large lettuce leaves {which you can use as a kind of tortilla almost when eating}.
To make salsa:
1. Combine all ingredients in a medium-sized bowl. Yep, that’s it!
