Did you know that it’s National Grilled Cheese month? I know, there’s a holiday for everything these days, but this time I’m happy to celebrate. Grilled cheese is one of my favorite comfort foods, and it is so versatile! It doesn’t have to be the same as it was when you were five- there are so many ways to switch up a plain grilled cheese sandwich.
One of my favorite ways to make grilled cheese is to make it pizza flavored. It’s really easy and fast to make, and who doesn’t love pizza? If you cut it into triangles, it even kind of looks like pizza slices. it’s also a very kid-friendly recipe- they can even customize by including their favorite toppings!
Pizza Grilled Cheese
Ingredients:
2 slices or 2 oz. {shredded} Creamy Havarti Cheese*
2 slices Eureka! Organic Bread
2 tbsp Pizza Sauce
4-5 slices Pepperoni
3-4 Fresh Basil leaves, chopped
1-2 tbsp Butter
Directions:
1. Melt 1-2 tbsp in the microwave for about 20 seconds. {I do this so that I use less butter- it spreads easier when melted, so I don’t have to use a lot to cover the bread!}
2. Butter one side of a piece of bread, and place that side down. On the non-buttered side of that piece, layer the Havarti cheese, 1 1/2 tbsp pizza sauce, pepperoni slices, remaining 1/2 tbsp of pizza sauce, and fresh basil.
3. Close sandwich with other piece of bread, and butter the top of the sandwich.
4. Warm up a medium to large skillet on medium heat and spray with non-stick cooking spray.
5. Place sandwich on skillet and heat on medium until bread is browned to preference- I did about 45 seconds per side, checking often. Enjoy!
*Note: I sliced a thick slice off of the chunk that I picked up in the deli case because it was the perfect size for the bread. You could pick up the pre-sliced package and use 2 slices of cheese, or you could also shred the chunk that I used and then use about 2 oz.

That looks like a yummy way to make a grilled cheese sandwich. The tomato in the pizza sauce makes it a little bit healthier.
