I don’t know about you, but summer seems to be flying by here! Shane didn’t get out of school until a couple of weeks ago so when I looked at the calendar the other day & realized that the 4th of July was this Friday, I was completely caught off guard. The holiday kind of snuck up on us so my good intentions of having matching outfits for the boys and a whole week of patriotic projects to do with Shane have kind of gone out the window. That said, I’m planning on at least making these patriotic 4th of July inspired cupcakes!
Whether you are attending a backyard BBQ or just watching the fireworks from home, these cupcakes are the perfect quick and easy {but cute!} 4th of July dessert!
Red, White & Blue Patriotic Cupcakes
Cupcake Ingredients
1 cup sugar
½ cup butter, softened
3 egg whites
1 ½ cup flour
2 tsp. baking powder
½ cup milk
2 tsp. vanilla
1 cup red and blue M&M’s
Extra M&M’s for decoration
(2) 12 ct. muffin tins, greased or lined with cupcake liners {like these American flag ones!}
Frosting Ingredients
½ cup real butter, softened to room temperature
4 cups powdered sugar
2 tsp. vanilla extract
5-6 tbs. milk {you may want a little more or a little less depending on how thick you like your frosting}
Directions
1. Preheat the oven to 350 degrees.
2. Combine the sugar, butter, vanilla, milk and eggs and mix well. Stir in flour and baking powder. Mix well and slowly fold in the red and blue M&M’s.
3. Pour the batter evenly into the cupcake tin. Bake 15-20 minutes or until golden brown. Insert a toothpick at around 15-16 minutes and if it comes out clean, the cupcakes are done.
4. Let the cupcakes cool completely before frosting. Frost generously with the homemade frosting and top with M&M’s.
{Makes approximately 24 cupcakes. Store in an airtight container up to 1 week.}
