There’s really no meal quite like the Thanksgiving meal. Not only because there is a huge abundance of food {and overeating is practically encouraged} but because many of the foods included are so special to us.
I don’t know many people who roast an entire turkey for a random Tuesday dinner, and while I occasionally make stuffing & often make mashed potatoes, it’s the tastes when combined that make it so magical. Memories of Thanksgivings past come flashing back with each bite- and okay, it’s pretty darn tasty.
One of the best parts about Thanksgiving dinner is having days & days of leftovers! In years past, we’ve made turkey sandwiches or just eaten smaller helpings of our original feast. This year though, I made this recipe from Hellmann’s &it was ridiculously good!
Leftover Turkey Casserole
Ingredients
-4 cups leftover prepared stuffing
-4 cups coarsely chopped leftover cooked boneless, skinless turkey breast, (about 1 lb./500 g)
-3/4 cup mayonnaise, divided
-1/4 cup whole berry cranberry sauce
-2 cups leftover mashed potatoes
-1 1/2 cups shredded low-fat mozzarella cheese
Directions
1. Preheat oven to 375°. Spray 8-inch baking dish with no-stick cooking spray. Spoon in 2 cups stuffing, then top with turkey.
2. Combine 1/4 cup mayonnaise with cranberry sauce; evenly spread over turkey.
3. Combine remaining 1/2 cup mayonnaise, potatoes and cheese in large bowl. Evenly spread on turkey, then top with remaining 2 cups stuffing.
4. Bake 40 minutes or until heated through. Let stand 10 minutes before serving. Garnish, if desired, with dried cranberries.
{Tip: If you’re making this recipe for a future dinner, you can pre-assemble the casserole while you’re putting away leftovers! Just follow the assembly directions as normal, then cover with foil & place in fridge until you’re ready to make the casserole!}
As much as I love Thanksgiving dinner, I actually enjoyed this casserole even more. Seriously. We ate some of it just as a casserole but then also ate some of it sandwiched into Hawaiian sweet rolls & it was ridiculously good.
Thanksgiving foods just go together so well, and the addition of the mayo gave it just the right amount of moisture and kept the leftovers from drying out in the fridge or while being baked.
