Our summer has been full of fun. We went to San Diego & checked out the Safari Park, Legoland, and Sea World, we had an extended sleepover at my in-laws when our AC was broken {which wasn’t “fun” per say, but wasn’t bad either, and Shane actually loved it} &we got to visit with Justin’s grandparents when they came here a few weeks ago. We spent a lot of time in the pool & have watched our fair share of movies since it’s been too hot to go outside much.
While we’ve had tons of fun, it’s been a little harder than usual due to my pregnancy. I was in my first trimester for all of May, June & July so I didn’t feel well. When I did feel good enough to eat, one of my favorite things was canned tomato pasta- I have no idea why, it just sounded {and still sounds!} amazing. But even though canned food makes dinnertime easier and I typically don’t mind using it, since I was wanting it every day I decided to come up with my own version rather than eat all of the chemicals in their variety. &Though I usually crave their plain variety, it’s easy to be more creative when making your own!
Homemade Spaghetti with Franks
Ingredients:
-Pasta, whatever shape desired {we used ditalini to keep with the typical small size from canned}
-11.5 oz tomato sauce
-1/2 tsp dried basil
-1/2 tsp dried oregano
-1 tsp garlic powder
-1 Hebrew National frank {any variety, we used reduced fat} per serving
Directions:
-Cook pasta according to package directions
-In the meantime, heat tomato sauce in a small saucepan over medium to low heat until bubbling
-Add in spices, stir well and simmer on low for about five minutes, stirring occasionally
-Pour pasta sauce over pasta, mix well, and top each bowl of pasta with sliced franks.
Shane’s not a fan of pasta sauce right now {he used to LOVE it}, but it’s easy to personalize this for him by removing his pasta before topping the rest with the sauce, and using a {very, very} small amount of butter instead. &He takes his hot dogs on the side- and man, does that kind love hot dogs. If I let him, he’d probably eat an entire package in one sitting! Anyway, the recipe is easy to customize as needed for each family member without being a huge hassle.
We still have some fun coming up before school starts on the 26th, including a family dinner for his birthday party this weekend, a birthday play date on his real birthday next Tuesday, and a few fun things we haven’t scheduled yet, like going to see Planes &things like that. Summer will be over before we know it though, so I’m enjoying it now!

We’ve gone through a lot of different hot dog brands, but we now only buy Hebrew National. We love the taste of them and like that they are all beef.

It sounds like your summer has been fun! We haven’t gone anywhere big but have played a lot in our local area. Lots of swimming, visiting museums, playdates. It’s been a great summer!
