Last week, I told you that Whole Boneless Pork Loin was going to be on sale at Costco {and offered a $50 Costco gift card giveaway!} and I decided to get in on the sale, too! I made a French Herb Crusted Pork Loin with Honey Mustard Sauce and it was so good, we just may have it for one of our Thanksgiving dishes, too!
Ingredients
- Whole boneless pork loin {I used about 4 lbs. from it}
- Cooking twine
- 2 tbsp olive oil
- 2 tsp crushed garlic
- 3 tbsp butter or margarine
- 1/2 tsp parsley
- 1/2 tsp thym
- 3/4 tsp rosemary
- 1 1/3 cups panko crumbs
- 1/2 tsp salt
- 1/3 cup Dijon mustard {plus more as needed to coat}
- 1/4 cup water
- 3 tbsp honey
Directions
- Preheat oven to 350 degrees
- Cut the desired amount of pork from the pork loin and trim the fat & sinew
- Using cooking twine, tie off into 1-2 inch wide sections of meat
- Dry meat thoroughly
- Preheat a skillet until a drop of water sizzles
- Add 2 tbsp olive oil & a pinch of salt to pan
- Brown all sides of meat until seared- each side is done when it lifts easily off of the skillet
- Place onto cutting board and cut off twine
- Add garlic, butter, parsley, thyme, and rosemary to pan and stir in pan for about 1 minute
- Add panko crumbs and ½ tsp salt to pan and cook about 2 more minutes or until panko browns
- Brush Dijon mustard onto all sides of pork loin, including ends and sides
- Coat with panko mix
- Put into a roasting pan and cook for 45 minutes, or until internal thermometer reads 145 degrees
- To make honey dijon sauce:
- Combine water, honey and 1/3 cup Dijon mustard in a small saucepan
- Stir until combined
- Simmer until the mixture is slightly thickened {about 2 minutes}
Pork is such an easy meat to create with since it goes with pretty much anything. By getting the whole boneless pork loin, you extend your options even further. You can cut it into chops, use it as a roast, make all of it, freeze some of it- it really is one of the most versatile cuts. Be sure to pick yours up at your local Costco- ours was over 7 lbs. and was under $17! The recipe above only used half of it and could easily feed 6 people- and we still have the other half of the meat in the freezer for later!

This sounds really yummy! As a Southern girl, I’m a fan of fried pork chops. But my thighs aren’t, so I’m going to have to give this a try. We’re having dijon chicken tonight and my recipe looks pretty similar so I can’t wait to try this on pork next!
