It’s no secret- I love to cook. &Now that things have calmed down a bit with the Holidays behind us, I’ve been able to make some real meals again instead of relying on my microwave! Yay!
I made this cheesy chicken rotini the other day & it was an absolute winner- and it made so much that we had the leftovers for dinner the next night! {&It actually reheats really well so that’s a big plus!}

This meal has protein, veggies, and some swirly twirly pasta to make even the littlest members of the family happy.
Ingredients
- 1-1/2 lb. boneless skinless chicken breasts, cut into 1-inch pieces
- 2 cups water
- 3 cups rotini pasta, uncooked
- 1 pkg. (16 oz.) frozen broccoli, cauliflower and carrot blend
- 1 can (10 oz.) RO*TEL® Diced Tomatoes & Green Chilies, undrained
- 1/2 lb. (8 oz.) VELVEETA®, cut into 1/2-inch cubes
Instructions
- Cook and stir chicken in large skillet sprayed with Pam® cooking spray on medium-high heat 5 minutes or until no longer pink.
- Stir in water. Bring to boil. Add pasta; stir. Cover; simmer on medium-low heat 10 minutes or until pasta is tender.
- Add remaining ingredients; stir. Cook, covered, 5 to 7 minutes or until VELVEETA® is completely melted and vegetables are crisp-tender, stirring frequently.
