Pineapple Coconut Muffins

– 1 20 ounce can crushed pineapple – 3 cups plus 3 tablespoons flour – 1 tablespoon baking powder – 1 teaspoon ground cinnamon – 1/2 teaspoon baking soda – 1/2 teaspoon salt – 1/2 cup vegetable oil – 1/2 cup sugar – 1/2 cup brown sugar – 2 eggs – 1 teaspoon vanilla extract – 1 cup sweetened coconut flakes

CAN I MAKE MINI MUFFINS INSTEAD OF REGULAR SIZED MUFFINS? Yes! These muffins can be made mini for the perfect bite-sized treat for a summer party or a snack for little kids. Bake them using the same steps, but for only 12-15 minutes.
