As a kid, spinach was the last thing I wanted to find on my plate. The only thing it was good for was a Popeye reference, or a snack to give my dog under the table. Now, however, I can’t get enough of the stuff!
These Cheesy Quinoa Spinach Cups are so easy to make that they are perfect for any day of the week. They are even simple enough for the kids to help with! {Of course, you’ll want to supervise or help them with the oven depending on their age.} I know that Shane is more likely to eat healthy foods if he’s helped me prepare them, so if your kids are reluctant to try spinach like I was, give these a try!
Ingredients:
2 cups cooked quinoa
1 cup mild shredded cheddar cheese
1 bunch of green onions, diced
1 cup fresh spinach, tightly packed and chopped
1 egg (optional, for extra protein and to help bind)
salt & pepper to taste
Directions:
1. Preheat the oven to 350 degrees and spray a 12 count muffin tin with non-stick cooking spray.
2. Combine the cooked quinoa, shredded cheese, green onions and fresh spinach.
3. Stir to combine all the ingredients.
4. Fill each muffin tin with the mixture and gently press down.
5. Bake 20-25 minutes until heated through and golden brown.
*Makes approximately 7-8 muffins. 1 muffins = 1 serving.

I am bookmarking this. I love spinach any way, but has to have salt on it. Never tried quinoa, is that like rice?
